Butter Rich Spritz Butter Cookies

This is an okay recipe. I expected more buttery shortbread taste and these don't deliver on that. Would look good on a cookie tray, but that's it for me.

Cake Balls

Yummy, but time-consuming when you count the waiting time. I found it difficult to dip these no matter how long they had been frozen. I rolled them in toasted coconut, crushed toasted walnuts and powdered sugar (individually, not all on the same ball) and they were much easier and the family loved them!

Pumpkin Bread IV

Unbelievably good! The only pumpkin bread recipe I'll use from now on. I followed the advice of others and substituted apple sauce for half the oil. Moist and delicious - you'd never know it had half the oil. I also cut it from 36 servings to 24 and it made one regular loaf and 4 mini loaves. Perfect!

Burrito Pie

This is a great recipe - my family loved it. I halved the recipe and my family of four still ate less than half of it. This recipe makes a lot! Per another reviewer, I used black beans rather than refried beans and it was delicious. The only other thing I changed was that I used 8 oz. of mexican style shredded cheddar/jack cheese rather than the 4.5 oz. half the recipe called for. We love cheese and this was awesome. Will definitely make again!

Baked Garlic Parmesan Chicken

Fantastic. I used a mixture of olive oil and margarine per another review and it was a little greasy so I don't think I'll do that next time. Also, cut the bread crumb mixture in half - I had way too much. Will make this again and again!

Garlic Chicken

This is a terrific recipe. I added 2 T. melted margarine to the olive oil mixture per another review. I think this made it too greasy so I won't do that next time. I pound my chicken breasts so they are the same thickness throughout and will cook at the same rate because I do not like it when the thin ends are dried out. Therefore, I cooked mine 30 minutes at 375°, not 425°. Perfectly juice and soooo tasty. The family says definitely a keeper.

Garlic Cheese Chicken Rollups

This recipe was very very good. The only thing I did differently was in the cheese. I wanted to make these but didn't want to go to the grocery store, so I mixed light cream cheese with garlic powder, onion salt & parsley. Perfect! I also used panko crumbs rather than bread crumbs because that's what I had. Turned out great - will definitely make these again!

Jalapeno Popper Spread

This was a little bland for us. Spicy, but I think it needs something more. Not sure what. On the other hand, jalapeno poppers can be somewhat bland as well, so in that case, it's right on! Pretty good with toasted baguette slices.

Awesome Slow Cooker Pot Roast

This is a great recipe. For my small family, I use a 2 1/2-3 lb. boneless chuck roast and halve the other ingredients. We always have leftovers so this is what I do with them. Discard any gravy and save the beef (if some is stuck to the beef, that's fine). Make an envelope of McCormick Au Jus gravy mix according to the directions. Put the leftover beef in the crockpot with the au jus for about 3 hours on low or until heated through. Serve on rolls with mozzarella slices. Great hot beef sandwiches.

Pecan Pie Bars I

These are terrific. Definitely make a day ahead so they can set up nicely. Since they are very sweet, you can cut them into smaller bars and so the recipe goes a longggg way! I used these on a dessert tray for Thanksgiving. People loved that they could have that pecan pie taste in just a few bites. Will definitely use this recipe again.

Perfect Turkey

This really was the perfect turkey. I didn't place it breast side down and then turn it because I knew that would be hard to do with a 20 lb. hot turkey. I didn't use the vegetables, either, since I didn't need them. So basically, I used the brine and cooking directions - it turned out perfect. Very moist and very tasty. Will use this again and again!

Libby's® Pumpkin Roll with Cream Cheese Filling

Taste was good and presentation was great, but I had a problem flipping the cake onto the powdered sugar covered towel. Since it's on parchment, it easily flips out, but how to get it onto the towel since the towel is covered with sugar and you can't really turn the towel over onto the cake? I managed it but not without a mishap or two and getting powdered sugar all over the counter, the floor and myself! If anyone has advice on this one, I'll take it. Family loved it so I'll probably make it again at some point.
