Mexican Lasagna
This was fabulous! Of course I changed it up a bit. I doubled the meat and added more cheese. I used the Mexican shredded mix. It was excellent!!

Connie's Zucchini 'Crab' Cakes
These really DID taste like crab cakes! I served them with a spicy mayo dip and it was just like we were on the coast! I really liked these and made them just how the recipe stated, with no changes at all. Thanks!!

Garlic Mashed Potatoes Secret Recipe
I scaled this to 5 servings and did not add any milk. I thought these were WONDERFUL! I used fresh garlic and didn't roast it. These were a perfect "smashed" potato consistency rather than a "mashed" potato. I truly enjoyed these! Thanks!!
