My Crab Cakes

i made this crab cake a couple weeks ago...the cakes came out well, but there are some changes that i made. I used only one sleeve of crackers and two cans of crab meat. The next time i use this recipe i will consider using LUMPS of fresh crab instead. but overall this recipe is good...

Apple Crumble Pie

I love this recipe. As suggested by another reviewer to use fuji apples and granny smith apples, the pie came out excellent. I made this pie 3 times already. The first two times i added about 2 tablespoons or of flour for the apple mix. I also layered in the sugar in between the apples; instead of just putting all the sugar mix on top of everything. One thing i wouldnt recommend doing (something i tried myself) is NOT melting the butter all the way like i did. I was in sort of a rush and decided to melt the butter for the crumble topping and it made the crumble too wet. So i added a little more flour to fix the the topping and when it came out, it wasnt as crumbly as it was before and kind of bland. So yeah, that was my mistake...The recipe is perfect as it is, just dont make the same mistake i did ;)

Best of the Best Blueberry Muffins

the muffins came out great! i followed everything on the recipe except i used i/2 cup of land o lakes margarine and i cut the salt down to about 1/8 tsp....they came out really good; the blueberries that i used were a little sour, but the muffins were still great. i had no problem with them sticking. i used paper cups and a non-stick pan and they fell right out. i also only baked them for about 25 minutes. this is a good blueberry muffin recipe!

Grandma's Egg Custard Pie

I followed every instruction for this recipe. I also took the advice of other reviewers and tempered the egg mixture so that the scalded milk will not cook the eggs. The pie was consistent and kept firm after i cooled it completely at room temperature...so i didnt have a problem with it building too much liquid. But the reason why i give this only one star is although i didnt make the pie taste "eggy" when i was taking the bites...the aroma smelled very much like boiled eggs and it just turned me off from the pie and didnt make it very appetizing to me and although my boyfriend usually makes everything i bake...he immediately said "no" when i asked him to take another bite ;P.

Picnic Fried Chicken

overall this recipe is good, but i didnt really think the batter mix was thick enough on the chicken; the next time i make this recipe i will dip the chicken through the batter process twice to have a better coating. i also added about 2 tsp of paprika and cut the salt by half.
