Fresh Mint and Cilantro Melon Salad
Made this for a breakfast meeting and it was a huge hit! I love that it's not so sweet and dessert-like, as most fruit salads tend to be. Everyone loved the mint & cilantro combination and best of all... it gave me something to actually USE my mint for! :) I used cantelope, honeydew and strawberries. You could sub just about any fruit and have it come out delicious!

No Bake Choco-Peanut-Oatmeal Cookies
Couldn't find my mom's recipe, so tried this. LOVE that you don't have to stir it constantly like my mom's version... but these don't seem to set up quite as dry as I like them. On the bright side, they're MUCH easier to work with (hers dry out before you can even get them on the paper if you aren't fast enough!) and the flavor is the same. Fast and easy. YUM.

Cocktail Meatballs
These are absolutely fabulous. To the people saying they're too spicy... did you use chili sauce (generally comes in a can), or hot sauce (comes in a bottle)... chili sauce is not that spicy and certainly doesn't overwhelm the cranberry sauce. I've made these twice now and am making them again tomorrow. Took them to a potluck at work and everyone loved them - they were the first thing gone! I use frozen veggie meatballs, since I'm vegetarian. Even so, nobody could tell and everyone rave and asked for the recipe! These are definitely my new party take-along!
