Spinach Tomato Tortellini

I added mushrooms and let the sauce really sit to thicken up. It was rich and delicious!

Terry's Texas Pinto Beans

Reviewed: Sep. 2, 2009
I soaked the beans briefly and made them in the crock pot. I didn't have any green salsa so I just chopped up some tomatoes and threw them in. These beans turned out good.

Five Flavor Pound Cake II

Reviewed: Apr. 21, 2009
Oh my, do yourself a favor and make this cake! I made a citrus pound cake and everyone was so excited to eat a second piece. Normally I end up throwing out the last couple pieces of pie/cake, but not with this recipe!

The taste was great and they held their shape perfectly from the cookie cutters. Everyone asked where I bought them from!

Country Apple Coffee Cake

Reviewed: Jan. 1, 2009
I made this dish because I already had all the ingredients on hand and I wanted to serve something sweet on New Year's Day. Now, I will go and buy the ingredients specifically to make this again! It was gooey and delicious. I left the nuts out and added an extra tsp of cinnamon. That was perfect. All the ingredients cooked to a nice soft consistency and it smelled wonderful as it baked.

Simple Turkey Chili

Reviewed: Dec. 18, 2008
I like thick chili, so I added double undrained tomatoes and beans and didn't add hardly any water. I also dumped in the spices and my family didn't even realize it was turkey! Good healthier option that also was a good trick.

Chocolate Covered Cherry Cookies II

Reviewed: Dec. 18, 2008
These are by far the best cookies on my Christmas gift plates this year! I followed others advice and I used less dough per cookie. I thought they were prettier and more "bite sized" that way. Also, I saved some chocolate to drizzle on top just for the look.

Christmas Fudge

Reviewed: Dec. 18, 2008
I followed the warnings of previous reviewers and I only used 1 3/4 c sugar, but I would have been fine with only 1 1/2 c. The texture was soft, so as long as it is served cold it is fine. It does look very pretty though, and it is a great addition to my Christmas cookie gift plates.

Lazy-Day Cranberry Relish

Reviewed: Dec. 2, 2008
I gave this a shot, and it turned out great! It cooked itself! I used fresh cranberries and a high-quality orange juice. After a bit of cooling, it turned into a great dish with a little bit of jelling. The best part was allowing it to cook while I was doing all the rest of my Thanksgiving prep work. I will be making this again next year for sure.

Granny Kat's Pumpkin Roll

Reviewed: Nov. 25, 2008
Oh my gosh, I used fresh pumpkin to make this and I literally saw my friends light up when they took the first bite. I remember these from childhood and I found this recipe just in time for thanksgiving. You will not regret trying this recipe, it is nearly foolproof. I used a lipped cookie sheet for the cake part and let the cream cheese sit out until it was easily spreadable with a butter knife. I then put it immediately into the fridge, then into the freezer, then served a week later with no complaints whatsoever.

Sugar Cookie Icing

Reviewed: Nov. 25, 2008
This recipe is exactly what I was looking for! I'm so glad I found it in time for Christmas cookies. I gave it a trial run for thanksgiving cookies, and everyone loved them. The glossy finish makes you want to pick up the cookie and try it, and the icing melts in your mouth when you do. I was able to do multiple colors on one cookie and I was able to get a "semi-pro" look to serve my guests. I will be using this recipe as my go-to from now on.

Blackberry Cobbler

Reviewed: Nov. 8, 2008
This desert was made with triple berries and was gone in a matter of minutes, since I served this at a holiday party. I did manage to sneak a bite and it was wonderful! Very messy to roll out as the recipe instructs - next time I will just roll out the dough and tear chunks as suggested by other reviewers.

Apple Crisp II

Reviewed: Oct. 1, 2008
I made this using a 1 1/2 qt round baking dish instead of the 9x13. I'm glad I did, because it turned out great! I read the reviews and cut down a bit of the white and brown sugar and using granny smith apples - marvelous.

Feta Chicken

Reviewed: Sep. 27, 2008
Everyone LOVED the filling! I'm dying to add chopped scallions to the inside since the feta has such a distinctive, strong flavor. I too (like another reviewer) used sundried tomato pesto and it came out great. With a couple tweaks, this is going in the permanent recipe box!

Chicken in a Pot

Much better than I thought it would be! Doubled the sauce due to other recommendations as well as pounded the breasts thinner. Turned out GREAT! We served the chicken on bow tie pasta and it was delicious.
