About this Cook
I'm 24 and have been diagnosed with Factor V Leiden deficiency, so I try to find healthy foods to enjoy that minimize Vitamin K-filled foods, such as green leafy veggies, broccoli/cauliflower, and liver... I teach high school and live with my sister. We have three dogs and one cat, so at least there is someone to give any of our cooking mistakes!
My favorite things to cook
Anything for my family and friends because they always say it's good...maybe they're just being polite, but that's okay!
My favorite family cooking traditions
I love my mother's stuffing recipe for Thanksgiving, but she still won't give it to me yet! She has given me her meatloaf recipe, though, and it is scrumptious!
My cooking triumphs
This past Christmas, I made a yule log from scratch for the first time ever (actually, 6 yule logs...), and EVERYONE was raving about it. It was so easy but everyone was really impressed, so I was proud of myself! And now I have the perfect recipe for chocoloate whipped cream...YUMMO! It's great in hot chocolate! :)

Easy Raspberry Chicken with Coconut Rice
This was excellent! I'm from a small town and I couldn't find raspberry vinegar, so I substituted with pomegranate-basalmic, and it was absolutely delicious! My sister swears that it is restaurant quality, and the leftovers made my coworkers very jealous the next day... An addition that I will try next time is some actual shredded coconut in the rice (an Indian student suggested it). Thank you!

Six Can Chicken Tortilla Soup

Texas Caviar with Avocado
It was delicious, but I tinkered with it a little bit to suit my own tastes. I omitted the jalepeno, and added a can of drained sweet corn and a small can of drained, sliced olives. Excellent! Everyone wanted to know how I came up with such a great recipe!
