Married to a wonderful man, we have three children- three babies within 3 1/2 years. There's not as much time to experiment with cooking as I'd like but I love trying out as many new, quick and easy recipes as I can.
My favorite things to cook
I love to make desserts but haven't done than in a while due to the fact I'm trying to lose "baby fat".
My favorite family cooking traditions
Not so much favorite cooking tradition as it is eating tradition- my Grandmother's holiday cooking: cornbread dressing, turkey, sweet potato casserole.
My cooking tragedies
Can't think of any real cooking tragedies, mostly occasions when it didn't quite turn out like it should have! Does burning down my mother's kitchen as a teenager count?

Zucchini Casserole I
Great dish! Everyone loved it. I only had 4 cups of zucchini so I added a peeled, diced eggplant. Some people complained of 1/2 cup oil being too much but I kept it the same since the eggplant would soak up much of the oil. I also used Italian seasoned bread crumbs After mixing all ingredients, I was a bit concerned about the dryness of the mixture but it turned out great.

Connie's Zucchini 'Crab' Cakes
YUM! I've been looking for meat substitutes in meals and this is a good one. Husband and kids liked also. Would also make a good appetizer if entertaining. I did not have a problem with them being soggy- but I did squeeze some of the liquid out of the zucchini and I also added dried minced onion to one batch (perhaps that helped absorb some of the moisture?).
