Albondigas
All I can say is YUM!!!!!!!! Altho I too cheated and used frzn meatballs. I also added a zucchini, plus more carrots and celery. I love to order albondigas soup at Mexican restaurants, and now I can make my own!! Thanks Belen for this recipe. I made a doble batch and took some over to my brother who is laid up with an ankle- he said the soup was to DIE FOR!!!!! This is a true keeper- can't wait to make it again!!!

Mexican Chocolate Chili
This is a great chili!!! A nice change from another recipe I use. We too like things a bit spicy, so I added a small can of diced ortega chilies, along with a bit more seasonings. Next time, I want to add a bit more chocolate....

Spinach Enchiladas
These were great!! Like others, I used low fat cottage cheese instead of ricotta, just to be healthier. Very easy!! Had them with low fat refried beans and a salad.
