Hearty Chicken Strata
My family loved this recipe. The way i prepared it reminded us of Thanksgiving. As I didn't have certain ingredients on hand, I sub. the milk, broth, and butter with 50 oz of cream of chicken (large can from GFS). didn't put eggs in because one doesn't like them and after eating it, I don't know how it would fit in. used croûtons (4 cups). I had cauliflower to use up, so I put that in too. I would either dice my potatoes smaller or precook them as some still weren't cooked all the way and may cut down on some cooking time (I admit, mine were a bit inconsistent in size). Also, I added fresh ground pepper, oregano, and thyme and used no salt. Could easily be used with Thanksgiving leftovers, including the stuffing. Will definitely make again with other variations that come to mind. This recipe sparked some creative cooking ideas.

Chive Cucumber Salad
THIS is the cucumber salad Mom use to make when I was younger. It took me awhile, but I found a recipe with NO sugar. I didn't have chives or green onions so I thinly sliced 1/2 of an onion then quartered the rings. I used one large glove of garlic chopped. I did these things just because I didn't have all the ingredients on hand. I thought Mom added dill weed so I added about a teaspoon of it. I should have made a double batch as my family of 7 ate it up and wanted more. Great recipe!

Grilled Cheese of the Gods
I had never thought of adding things to the butter on the outside. I think this made the sandwich beyond the sandwich we had when we were kids. I took it one step further and added one fresh chopped garlic clove to a double batch. We LOVE garlic. I didn't have bacon so let them choose which luncheon meat the wanted, if any. I will definitely make my sandwiches like this from now on! Great recipe.
