Garlic and Ham Spaghetti

My family loves this recipe. I usually increase it to a whole pound of spaghetti, a couple bunches of fresh broccoli florettes (cooked in the water with the pasta), an 8oz package of (finely) diced ham, and a 4.25 oz can of chopped black olives, and 1/2 a cup of butter. I leave out the mushrooms because I don't like them. Very quick and tasty too!

Italian Style Sausage

I can't eat store-bought Italian Sausage because of all the junk they put in it, so this was a great find. I added a couple pinches of caraway seeds because it seemed to be missing something and it was perfect. My husband and two of my three kids liked it better than the stuff from the store!

Marie's Easy Slow Cooker Pot Roast

I used a packet of Simply Organic French Onion Dip and seasoned the meat with a touch of garlic salt and lots of fresh cracked garlic pepper. My whole family loved it and that's saying something as I have picky eaters!

Baked Chicken with Peaches

Yummy! I cut the recipe in half because I only needed four breasts. I sprinkled the chicken with a little bit of salt and pepper before adding half the brown sugar & the peaches. Then I sprinkled a little ginger & cinnamon over the peaches (didn't bother to measure) and just a dash of clove (because that's all I had left) then topped with a light sprinkling of brown sugar. I cooked it in a covered 4 qt. casserole and didn't baste it once yet it still turned out tender & juicy. I spooned some of the extra peaches & sauce over brown rice on the side. My husband and oldest son loved it, the two younger kids didn't - but they're picky and don't like trying new things.

Spicy Almond Chicken

I was a little bit worried when I pulled this out of the oven because it didn't look that appetizing but my doubts were unfounded. It tasted great, my husband, 9-year-old and 2-year-old loved it. My picky 6-year-old didn't, no surprise there. I did change it a little bit. I used 4 boneless, skinless chicken breasts and halved the sauce ingredients. I had to use black currant jelly as I couldn't find any red (which may have been why it turned out looking brown and icky?), and I substituted spicy brown mustard for the yellow mustard because I don't like yellow mustard. I put the breasts in an oval casserole dish just big enough for them and poured the sauce over them and cooked according to the directions. I made some brown rice on the side and served the sauce over the rice too, yummy! I also made this for my family on Christmas Eve and it was a big hit. It does look a lot better using yellow mustartd and red currant jelly too!

Broiled Herb Butter Chicken

Hubby and 3 picky kids loved it. Flavor is just right, not overwhelming. I cut butter down to 6tbs. and it was just right. Line broiler with foil for easier clean-up.

Delicious Raspberry Oatmeal Cookie Bars

This recipe sounded great and the reviews were so good that I had high hopes. It was way too dry and very crumbly; half the topping just fell right off. My kids hated it and my husband thought they were too sweet. It stuck to the foil (my fault really, I spread the jam too close to the edges and forgot to butter the foil) but they left an awful metalic aftertaste in my mouth (I'm never cooking anything in a foil lined pan again). If it hadn't been for that I might have been able to ignore how dry they were and finish off the batch. As it was I ended up throwing half of them away. :(

Thighs on Rice

This dish was pretty good. I used low sodium chicken broth and added a little bit of additional seasoning (1 t. Mrs. Dash) to the rice for flavor.

Easy Herb Roasted Turkey

My husband AND kids raved about how tender and tasty this turkey was. I put 2 pats of butter under the skin of each breast and added several cloves of garlic a small quartered onion to the cavity before I roasted it. I will definatley be making this every year!

Becca's Custom Turkey Shepherd's Pie

I used refrigerated pie crusts and instant mashed potatoes as time savers. Flavor is really good, my husband and I liked it but the kids were so-so on it. Froze the second pie to have on hand for an easy dinner - tasted fine reheated!
