Sweet Potato Casserole I
EVERYONE loved this one! I made a few changes to suite my families needs: instead of 1 cup sugar, I used 1/2 c splenda, I replaced the mile with evaporated milk, for the topping I used walnuts instead of pecans, and I used 1/2 c brown sugar splenda blend. One other change was that I didn't cook the sweet potatoes first as when mine came out of the can they were really mushy enough to use right away. Oh, I also added 3/4 t nutmeg & 3/4 t allspice as suggested by another poster. All in all, this dish was gobbled up by everyone! I will use this again!

Southern Peach Cobbler
this is by far my favorite recipe. I've used it several times. Since I live in CA I either use fresh peaches, or frozen from my moms tree. This is so easy and it's delicious. One note though, I haven't figured out how to store it if we don't eat it all. The crust gets mushy, but I don't usually have that problem!!! I wanted to add that I made this for a friend's son that is allergic to milk, so I made a really small portion and used soy. It made no difference. It was still delicious and he gobbled it up, enjoying his own personal dessert.

Big Cheeseburger Pizza
This was fun. I was too scared to try the thousand island dressing as the tomato sauce. I just couldn't bring myself to do it. I just used standard tomato sauce. The hubby really liked it but kept wanting me to hand him a piece without lettuce! LOL
