My husband and I are heavily involved in an Internet ministry. I spend time keeping my web sites up and running and cooking for him as well as guests.
My favorite things to cook
Anything Asian or has a spicy taste. Since we live in Ecuador and there is little spice in the Chinese restaurants, I have learned to cook my own.
My favorite family cooking traditions
It had taken me a long time to learn how to make my mother's gravy but finally have it down pat.
My cooking triumphs
It took me at least 6-7 times to figure out how to make General Tso's chicken but finally the recipe has been perfected.
My cooking tragedies
Laying my Better Homes and Garden's cookbook on a hot burner. Making fried chicken for the first time in Ecuador. The altitude in the Andes requires a longer cooking time. Since then I do not fry whole chickens but only chicken strips which cook faster.

Good Old Fashioned Pancakes
I subbed white whole wheat flour for the flour and it turned out great! I added more milk since it was very thick. I'll make these again!

Homemade Shake and Bake Mixture
I halved the recipe, made 2 cups of my own whole wheat bread crumbs - toasted 5-6 slices of bread, cooled, then put in processor to make crumbs. I used olive oil in this recipe, skipped the minced onion and garlic and added a half tsp. garlic powder instead. Baked 7 bone in chicken thighs at 400 degrees for about 50 min. It is amazingly delicious!

Alaska Salmon Bake with Pecan Crunch Coating
I had mixed reviews on this dish. I thought it was a bit bland but my husband and friend really liked it.
