A Firefighter's Meatloaf

I'm not sure what went wrong, but this didn't go over well here. The meatloaf was fairly moist and flavorful, but the we found the salsa off-putting, and the flavor a bit odd.

Big Soft Ginger Cookies

I was in a rush, and hate using margarine, so I decided to make these as oil-based bars. I used 2/3 c. oil, added 1 T. vanilla, used half brown sugar and half white, and juice instead of water. I made one and a half time the recipe for a 9x13 pan and baked it for about 1/2 an hour. The result was a very flavorful, dense bar that was amazing with a glass of milk.

Melt-In-Your-Mouth Meat Loaf

This is an exceptionally moist meatloaf. I didn't have time to put it in the slow cooker, so I just baked it at 350 in the oven for a bit over an hour. I also used soy milk instead of regular, and added Italian seasoning and garlic powder.

Pecan Pie V

Since corn syrup is hard to obtain here, I've been looking for such a recipe for years. However, when I made this pie, I found that I missed the sticky richness of corn syrup based recipes. If you do make this, throw in 1/2 c. chocolate chips and extra pecans.

Potato Spinach Casserole

This is a nice, creamy side dish, and a great way to get kids to eat spinach - my crew all had doubles. I used plain yogurt instead of sour cream to cut calories. A dash of garlic powder would be a nice addition.

Tartar Sauce I

This is a fabulous sauce. I made fish that came out so dry that no one wanted to eat it. Once I whipped us this sauce, the fish vanished. Thanks.

Oven-Fried Catfish

Disappointing - dry and bland. I used sole instead of catfish, but I can't imagine this being good on any fish. The only thing that saved this fish was Tartar Sauce I from this site.

Fresh Pear Crisp

This was good, although I found a bit dry. I think next time I'd use a bit more lemon juice with the pear mixture. I used oil instead of margarine and it was fine.

Pumpkin Stew

I adapted this for a crock pot. I browned the meat and then added onion and garlic. I then transferred it to the crock pot along with the ingredients listed as well as a few potatoes, a large sweet potatoe, 2/3 c. of wine, parley, onion powder, and basil. I cooked it on high for six hours and it was a really hearty, satisfying stew.

Apple Betty

The entire family loved this! To make it a bit healthier I used half whole wheat flour, oil instead of butter, and cut the sugar from 1 c. to 1/2 c. brown, 1/4 c. white. This is winner!

Creamy Chocolate Frosting

This was good although I found it a tad grainy. I used soy milk rather than evaporated. If you want something really gooey use a frosting that includes melted chocolate but for frosting cupcakes (as we did) this is perfect.

Simple White Cake

Excellent - light and fluffy. To make this non-dairy, I used margarine instead of butter and soy milk instead of regular. We made cupcakes and the tops came out deliciously crusty while the inside was so soft. A double recipe made 24 cupcakes.

Butterscotch Oatmeal

YUM!! This was so good - rich and creamy and totally satisfying. However, you must cut the brown sugar and butter in half, otherwise it will be sickly sweet and greasy.

Grilled Zucchini and Squash

This was quite good. I used 1 T. of olive oil instead of the frightful amount of butter called for and added a 4 oz. can of mushrooms. That really jazzed it up. The kids still wouldn't touch zucchini but hubby and I enjoyed it.

Apple Cake IV

Wow!!! This cake is amazing. Light, fluffy, flavorful - everything you'd want in a cake. I cut the sugar to 1 1/2 cups and replaced 1/2 the oil for applesauce. Cut the apples and don't skimp on the beating time. You'll get a winner.
