Spanish Potato Omelet
Surprisingly good and so easy! We will occasionally have "breakfast" for dinner and it's hearty enough as a main dish, although you might want to make extra if there are more than 2 people. My husband loved it and so did my 2 1/2 year old even with onions. We skipped the tomato and green onion garnish and it was tasty on its own. Served it with bread and a side of veggies.

Easy Batter Fruit Cobbler
Love this recipe. It's so easy to assemble! I've tried it with a mixture of fruit and also all the same fruit. Either way, it's always tasty. I made it last minute for dinner guests the other night and everyone raved. This will be a dessert staple - so easy!

Southern Candied Sweet Potatoes
Good basic recipe, but WAAAYYY too sweet. I'd cut the sugar to 1 cup or less.
