Butternut Squash Soup
Followed the recommendation to cut the cream cheese in half; otherwise made no alterations. The soup is really good but I think 4oz is still too much cream cheese. I'll make it again but try adding carrots and cinnamon.

Sweet Potato, Carrot, Apple, and Red Lentil Soup
I really like this, but it's missing something...maybe a bit more salt or some cayenne pepper. Great recipe however.

Quinoa with Sweet Potato and Mushrooms
Awesome! I followed the recipe to a T and it turned out fantastic. The sweet potatoes and pecans give this dish plenty of flavor. I did have to add water to keep the vegetables from burning.
