Five Bean Casserole

These were great! I made them for Easter dinner. There were only two of us for dinner, but I ate up the leftovers within two days! Great, easy side dish. Nice replacement for baked beans.

Tropical Tuna Melts

These were really good. My husband and I made them for a busy weeknight meal with some creamy tomato soup. Quick, easy and delicious. Yum. I used ff mayo and wheat English mufins. It turned out great. We'll have these again.

Chicken Pot Pie IX

This potpie was great! And really easy, too. I used skim milk and added a tbsp. of minced garlic (everything in our house has to have garlic.) We aren't crazy about leftovers, but we ate this pie up the next day.

Seared Salmon with Indian-Inspired Cream Sauce

This salmon was delicious! I also couldn't find porcini mushrooms, so I also used regualar ones, and it was still really good. I used fat-free half and half, too. The sauce turned out great, but I agreee that you could get away with about half as much, but you can save the extra and put it on just about anything-it's that good! this is a real restaurant quality meal, although it is a bit expensive (the salmon, saffron, special mushrooms). Great for a special occasion.

Spinach Lasagna II

Deilicious! I added a tbsp. minced garlic and 1/2 cup chopped white onion for flavor (sauteed in butter until the onion is soft)-I think it might have been bland without it. My husband loved it, and he's usually skeptical abuot meatless entrees! Try this one-it's great!

Slow Cooker Green Beans, Ham and Potatoes

These were good, but it would save time and energy to just use cubed ham. The broth is really good and it's a yummy way to use up green beans. I came home with 2 lbs. of them by accident-at the busy farmer's market, I was given the wrong bag! My husband really liked it.

Taco Pasta Salad

This was great. I used lighter ingredients and whole wheat pasta. The pasta got a little bit grainy, but otherwise it was really good. I even took it to work for lunch two days in a row.

Blushing Applesauce

It was great! Nothing beats fresh applesauce in the fall. I recommending cutting the sugar in half, though. It was just a little too sweet.
