Honey Wheat Sandwich Rolls

WOW! This is the first bread recipe that I love!! I have searched high and lo for the perfect roll recipe and this is it!!! I used a whole packet of yeast and instead of butter, used 2 Tbsp of canola oil - everything else was the same. It turned out well. I got 20 rolls from this recipe. I loved it!

Easy Oatmeal Muffins

I used 1/2 c. white and 1/2 c. wheat flour. I added dried cranberries and some honey. I used 1/2 c. brown and white sugar. I used rolled oats instead of quick cooking. I grounded up half of the rolled oats; it gives the muffins a bit of a crunch. I added chocolate chips and cranberries. They turned out great. very tasty!!!

Whipped Cream Cream Cheese Frosting

I'm licking the spoon as I type! Yum!! I did not have the whole amount of heavy cream; I may have had a half of cup if not less and it still turned out really well! And it came out pretty thick, which was perfect for frosting. I would say it was just as thick as the frosting you buy in a can. I think I will continue to use 1/2 cup of heavy cream in the future; it turned out really nicely. I followed the rest of the directions and measurements to a T. I also like how it did not come out overly sweet.

Microwave Caramel Popcorn

This was really good and QUICK!! I halfed the recipe. I used one bag of microwaveable popcorn (with butter in it already). I mixed everything together in the bowl and then added the popcorn to it and just stirred it up. I also didn't cook as long each time. I just watched it but I did make sure that the butter mixture was bubbling in the microwave before adding the baking soda and popcorn. It turned out really good; just enough for two people. Excellent and easy!!! will use again.
