Big Batch Kris Kringle Cookies

I combined this with the Cranberry Oat Cookie recipe. I used 2 c whole wheat flour, 2 c oatmeal, 2 c white chocolate chips, 2 c orange flavoured craisins (finely chopped) and a pinch of cinnamon. I got 87 1 tbsp scoop cookies, baked at 350 for 13 minutes on insulated sheets. Big hit with my son's hockey team :)

Angel Food Candy

This is by far the best sponge toffee recipe I have made. Only hint is to sift the baking soda first so there are no lumps in the sponge. I doubled the recipe and got 2 1/2 pounds of weight after dipping in dark chocolate.

One Bowl Chocolate Cake III

Made this for my son's birthday, frosted with Rich Chocolate Frosting, was a big hit. I reduced sugar to 1 1/2 cups, 3/4 white & 3/4 brown, reduced baking soda to 1/2 tsp as some had mentioned strong taste and I don't like that, used coffee for hot water. Baked in 9x13 pan for 35 minutes and it was perfect.

Baked Potato Casserole

I altered this recipe to make it healthier, I used 6 potatoes, 1 onion diced, 2 cups shredded cheddar, 1/2 cup fat free sour cream, 1/2 cup fat free ranch dressing, sprinkled top with real bacon pieces and Emeril's Essence made with No Salt. I boiled the onion with the potatoes to soften. My family really liked this, I found it perfect the way I made it, cheesy enough and tasty, plus saved a ton of calories and fat.

Hearty Hamburger Soup

This so good with few ingredients and things you have around! I used 1 cup barley and added a can of drained and rinsed mixed beans. A big hit, served with Blue Ribbon Overnight Rolls. Can't wait for leftovers :)

Morning Glory Muffins I

Mini Pumpkin Butterscotch Muffins

I was pleasantly surprised, not a fan of butterscotch and had some chips to use up, kids really enjoyed as snacks. I did omit brown sugar and reduced the butter by half and subbed whole wheat flour. Next time I would increase the spices.

Juicy Roasted Chicken

Very tasty! I used 1 tbsp butter in cavity and 1 tbsp on top. I put 2 crushed garlic cloves and a sprig of rosemary in the cavity. I put 1 sprig of rosemary, stalk of celery and a quartered onion in the roasting pan with water to stop them from burning. If your chicken has a "slimy bottom" as someone had mentioned, use a rack in your roaster, which I did or buy air chilled chickens VS water chilled since they have no added water.

Quick and Easy Pancit

We really liked this. I used onions, green peppers, mushrooms, cole slaw mix and bean sprouts as my vegetables. I made a simple teriayaki sauce of 1/4 cup soya sauce, 1/4 cup white sugar, 1/8 cup lemon juice, 2 tsps chopped garlic and 1/2 tsp hot pepper ginger paste, bring to a boil and whisked in dissolving flour until thickened, then I poured over the stir fry instead of just soya sauce. Made lots, great leftovers.

Real Italian Calzones

I divided into 8 pieces, still quite large, will try 12 or 16 next time to make it more of a snack size. I used spinach, ricotta cheese, pepperoni, garlic, Italian seasoning and mozzarella cheese for my filling. Baked for 25 minutes at 350 degrees. Really nice!

Buttermilk Pound Cake II

Really nice texture and taste. I reduced the sugar to 2 cups as I thought 3 would be too sweet, can't tell the difference. I baked mine in a bundt pan and it was done in 57 minutes, edges were brown and center came out clean with a toothpick. If anyone's cake is dry it is from the cooking length, 90 minutes is way too long.

Irresistible Double Chocolate Muffins

These are really good! I didn't have wheat germ so I used oat bran, reduced cinnamon to 1 tsp and left out chocolate chips to reduce fat content. Tasty!

Mushroom Stuffed Beef Rouladen

I used precut and pounded meat which made the recipe really easy. Was a nice change from the regular rouladen. I added more garlic to the stuffing, probably 1 tbsp minced. I used 1 can cream of mushroom soup, 1 can of broth and 1 can full of shiraz wine for the gravy, with garlic and black pepper. I let the meat cook for 3 hours in the oven at 250 degrees, then removed the rouladen and thickened the gravy on stove top with instant dissolving flour.

Slow Cooker Chicken Taco Soup

Really tasty! I use 1 can mild and 1 can lime & cilantro Rotel tomatoes. My older son found it too spicy but we liked the kick. I used 1 tbsp taco mix as I made it from this site.

Oma's Cottage Cheesecake

I made 1 1/2 recipes since I had 3 cups of cottage cheese to use up. I cut the sugar in half since the crusts tend to be sweet. I bought 2 graham cracker crusts and baked the cheesecakes for 40 minutes at 350 degrees. Made a bumbleberry sauce to serve with it, a big hit!

Rosemary Ranch Chicken Kabobs

Awesome! everyone gobbled them up. I omitted the sugar and salt, used light Ranch dressing and halved the oil. Marinated 8 bl/sl chicken thighs for 36 hours, wish I had made 8 more :)

Breakfast Pies

I found the bottoms browned more than I would like, next time I will bake at 375 for 16 minutes instead of 400 for 18. I substituted bacon pieces for the sausage and they were really tasty. I used jumbo muffin cups and no spillover, they really puff up!

BUSH'S® Red, White and Bean Minestrone

Very good! I made it vegetarian by leaving out sausage and using vegetable stock instead of chicken. I also used fresh basil instead of the pesto, just my personal preference. My sons really liked the soup and I served it with garlic cheese biscuits from this site
