Zucchini Coconut Loaf
My coworkers loved it. I doubled the recipe for two loaves, however the loaves were so small! I recommend increasing the recipe by 50% to make a decent sized loaf. I also omitted the raisins, thought it was overkill. Other than that, this is definitely good zucchini bread. Oh, and I used half light brown sugar and half white sugar.

Pizza Without the Red Sauce
This was amazing. The sundried tomato pesto really makes it special. I have used both spinach and broccoli rabe, and both were excellent. You can probably substitute any leafy green for the spinach.

Spinach Stuffed Pizza
The spinach mixture didn't have enough flavor and made the crust soggy.
