Balsamic Roasted Red Potatoes
I loved this right up until I added the balsamic vinegar. Funny, because I expected that to be wonderful but the dish was overpowered by the vinegar and would have been better simply roasted with the spices as listed.

Red Pepper Chimichurri
This had good flavor, but was very thin so I can't see it being used as a dip. Also very oily. Perhaps I didn't add enough parsley, but I was not sure at all how much a "bunch" is. I would consider this more a marinade as it turned out, rather than a dip or sauce. For those reasons I didn't rate it higher, but it has potential.

Black Bean Vegetable Soup
This is a great soup - nicely sweet and very healthy. On occasion I have successfully used vegetable bouillon for the stock and I have also successfully used regular canned tomatoes with 2 tsp of sugar when I didn't have stewed tomatoes.
