Make Ahead French Toast

Very good and loved the ease of preparation, anything make ahead is a bonus. I did not need to use 5 eggs, maybe 3. This one is rich, though so you best not be watching calories.

Spinach Dip with Water Chestnuts

I like the water chestnuts for the extra crunch. This is the 'traditional' recipe that you remember! Get the spinach very dry - otherwise, it'll make the dip stringy and soupy.

Elegant Pork Loin Roast

I'm glad that I cook to temp and not time, this would have been bacon at 3 hours. I used a full 4lbs of roast. It presented very well and looked pretty but the meat was not particularly moist or tasty. Maybe the crock pot is the way to go for this one as others have suggested.

Roquefort Pear Salad

Loved it! The only thing I would change is to cut the pears a bit larger, maybe quarter slices. I chopped and they tended to settle at the bottom. Christmas crowd loved it and the light flavored dressing (not over dressed like most).

Mini Ham And Cheese Rolls

Just like I remember! The only thing I changed was to add a few dashes of worcestershire sauce to the topping. Used the small, store brand rolls (this recipe makes 2 trays), sliced the tops off, ham, cheese, tops back on, then the topping - all in the little aluminum tray the rolls came in. Keeps all the 'goods' on the rolls!

Day Before Mashed Potatoes

I thought they were good. Not sure if I did something wrong but I made mine the day before and they tasted like I made them the day before. I like the idea of them being ready so I can just throw it all in.

Italian Vegetable Soup

This is very similar to the Taco Soup II recipe, many of the same ingredients, different spices. I loved it for the ease and heartiness. I added a couple of small cans of tomato juice to loosen it up a little.

Italian Sausage, Peppers, and Onions

I skipped green pepper but used red and yellow instead. I followed other suggestions and used beer in place of wine. I like extra sauce to dip my bread in so I used more beer (wine) than listed in the recipe. It was so easy and very tasty.

Artichoke & Spinach Dip Restaurant Style

Huge hit at a Superbowl Party. I give it five stars because I didn't even get to try it...it was gone by the time I went back! I used extra roasted garlic and a whole package of cream cheese.

Hot Sweet Onion Dip

I have had this before at other parties and thought it was delicious. Yes, a bit greasy but it's cheese and mayo, so I was not alarmed. It's easy to make and I usually have the ingredients on hand making a quick fix. I DO prefer the onions to be finely chopped. My were a touch course. It will be finer next time. Love it!

High Temperature Eye-of-Round Roast

Very easy to prepare, piece of cake to cook. I rubbed olive oil and coated with garlic, pepper and salt. Served with horseradish sauce on the side, potato and a veg. Perfect change from a crockpot roast.

Taco Soup II

My husband can't get enough of this stuff! I also substituted corn for the hominy and used black beans in place of lima beans (just what I had on hand). I used the prescribed amount of water and thought it was still a bit thick but didn't want to water it down too much. I threw in two small cans of tomato juice to thin and it worked perfectly.

Excellent, very easy. I am always looking for good crock pot recipes and this fit the bill. We used a leaner cut of meat and trimmed to our liking and used extra pepperocinis!
