Spicy Vegan Potato Curry
Made this tonight and it was a huge hit with the hubs. This must be served with rice or naan as it is a very complex and spicy dish. I love how healthy it is-I used light coconut oil, but this dish does not feel like it's lacking. Be mindful as to how fresh and potent your spices are and moderate as needed.

Roasted and Curried Butternut Squash Soup
Yummy! And this is one of the healthier of the Butternut soups out there-which is why I chose to cook this one. I also roasted an apple with the other veggies and added 1/2tsp of powdered ginger (no fresh on hand). I used Greek yogurt (it's much more creamy) and a dollop of 1/2&1/2-which really wasn't necessary.

Hearty Lentil Soup II
I love Lentil soup! This was a bit lacking in flavor for me, so I threw in some Curry, Cardamon pods and cayenne pepper. I also used Rotel tomatoes instead of just generic diced tomatoes which added a nice bit of flair. No need to be stingy on the veggies-the more the merrier :-) This was my first attempt at lentil soup and found this recipe more like good suggestions rather than instructions. But that is the fun of cooking isn't it? :-) Lentil stew will be a staple dinner in my house.
