Funky Enchilada Casserole
As I had already shopped and bought the corn tortillas, I cut them up and baked them to make "tortilla chips" and lined the bottom with that. It worked! I also sliced the garlic to get more flavor, and added a couple of sliced mushrooms that happened to be in my fridge and needed to be used. The kids loved it, I thought it was good (even better leftover for lunch the next day). Hubby didn't like it though. :( He's hard to please anyway....

Poke Cake II
My mom has made a cake similar to this for years...the only difference is...after she pokes the cake and pours the jello over, she coats the cake with a layer of vanilla pudding (stovetop, not instant!!), and then "frosts" it with cool whip. The pudding really adds something! YUMMY!!!

Banana Upside-Down Cake
Pretty good...I added a little more butter than it called for, and it came out great! The only thing is, it didn't keep well for leftovers, but that's ok - next time I'll make it for a potluck...I'm sure there will be no leftovers! (And my bananas DID NOT turn green!lol)
