Mini Pineapple Upside-Down Cakes
These were delicious, but I only gave it 4 stars because of the pain in the butt time it took to cut the pineapple rings! By the time I was done I was wishing I had just made a regular Pineapple Upside Down Cake. BUT - everyone loved the mini cakes at the potluck I brought them to!

Chocolate Covered Cherry Shooters
YUMMY! Didn't even taste like an alcoholic drink...and I substituted half and half for the heavy cream for less calories...

Pepperoncini Beef
