Arabic Cookies
i halved the recipe. the first time i tried, was too lazy to get my shortening i just used 1 cup of soft margarine in place of 1/2 cup each for butter and shortening. Disastrous. the cookies were too soft that looked like mini round omellettes. Then, curious, tried the next day properly using shortening. was great. I cut the sugar (my dad's diabetics) from 1 cup per recipe to only 2/3 cup for half of recipe. i also added about half cup of walnut (to slow the release of sugar.. i read somewhere) it turned out really great, and i think was pretty safe for diabetics. Very tasty.

Applesauce Cake IV
i had many leftover apples, so i made an applesauce(found the recipe in this site also). i was too lazy to chop the raisins or mix it properly, so i just dumped all ingredients and adding semi-ground walnuts (about 100 gr) in a bowl, combine it by hand, and put it in a loaf pan. The cake didn't rise well (well, had been expected because i didn't mix it properly) but it tasted soooo good that i cancelled taking it to office and eaten it myself within 3 days. super yum.

No Sugar Apple Pie
I love this because it's sugarless. my father is a diabetic, so i'm trying to be careful in consuming sugar. i added the cinnamon, and threw in a cup of raisins, and believe it or not, i feel i have a ton of energy breakfasting with this than with regular bread. Thanks for the great recipe.
