Roxie's Bran Muffins
I usually hate it when people rate a modified recipe, but this was so darned good, I'm breaking my own rule. I substituted white flour instead of whole wheat, used 2 tbls of oil instead of melted butter, added 1/2 tsp baking powder and used 2 bananas instead of the banana and apple. Definitely a keeper recipe!

Creamy Potato Leek Soup II
It's good, but definitely still needs to be seasoned with salt and pepper in the end. I did like some others and didn't blend all of the bacon, leeks or potatoes to get some texture in there.
