Sage Pork Chops

Terrific flavor! My only suggestion is to take the juice and add a bit of cornstarch to thicken it so it can be used over the chops withopur running all over the plate. We may also add some caramelized onions next time but it certainaly isnt required.

Peach Pie

My peaches were not the juciest so my pie was rather dry. If I decide to make this out of season agian I will probably use canned. Overall good. (took 9 peaches for my 9 inch pie).

Double Layer Pumpkin Cheesecake

I brought this to a thanksgiving potluck at work and it was the first this to go! I check out the top review but decided agianst making the changes since they were go drastic it should be a different recipe. I made as it with the graham cracker crust recipe from this site. it was fantastic and stole the dessert show!

Wow these were awesome!!!! I feel this is going to be a monthly football sunday item in our house! roll them lightly in flour befor frying for a crunchier wing that holds more sauce!

One Skillet Corned Beef Hash

I despise hash of any kind and only make it for my husband and kids, with that in mind I have to say this was FANTASTIC! It must have been the cider vinegar which gave it a whole new dimension. Very well done!

Sausage Scalloped Potatoes

This is terrific. Next time instead of chopping the onions I will quarter and slice. I topped with cheddar cheese after it was through cooking and let in melt in the 5 minutes it had to rest. I will be making this again.

West Coast Cod and Shrimp

I used 1 1/2 pounds of perch instead of cod. I'm glad I had some extra fish as it made a lot of sauce. Its says seasoning salt to taste so there really isnt any excuse for anyone to call this bland. I threw in some old bay to the sauce which was a great touch. I considered using the canned salad shrimp because it is after all a sauce but decided to buy the raw peel and eat. I'm very much glad I did the shrimp and sauce were perfectly cooked and went very well together whithout overpowering the light fresh taste of the fish.

Not bad. I love the rasted garlic but I will scale back on the butter. Mash your garlic and only soften the butter dont melt it so you can spread it a little thinner.

The Best Clam Sauce

This lives up to its name!! I did modify it only slightly. I used whole baby clams which I added in for the last 4 minutes of cooking, they will be extremely tough after id you cook them the whole 20 minutes. I did drain half the juice as directed & ended up grabbing a bottle of clam juice & using half of it, next time I simply will reserve all the liquid. I didnt have white wine, so I used cooking sherry. Red wine vinegar will also work just as well for an emergency white wine substitution. Finally I used thin linguine & topped with asiago (which is a much better choice than parmesan for a dish like this). This was outstanding a new family favorite!
