Amish Breakfast Casserole
This was a hit for Christmas breakfast. I love most breakfast casseroles but have a family member who does not so we had done simple eggs for several years and I decided to try again. This was perfect! I used 11 eggs and added salt, pepper and a little garlic salt. That was just enough flavor for all my picky eaters. Very nice texture, the potatoes are a wonderful addition and you have no idea there is cottage cheese in there. Also quite simple so this recipe is a keeper.
