Artichoke Chicken
This is such a great recipe. I use large bone-in chicken breasts and bake in single serving clay dishes. If you have had bad luck with large chicken breasts being dry- try this recipe, you won't be sorry!

Tuna Lime Tostadas
Great recipe and virtually zero prep-work/time! I don't think you can make a tuna sandwich faster. Presentation is amazingly nice for a quick lunch/brunch type meal. No changes necessary but can be easily modified for different diets/tastes.

Mushroom Turkey Casserole
Great all-purpose recipe. I had to make a few changes based on what I had available and it still came out great. For beginners, this is a great starter recipe to use as a base as you become more creative. Everything in the recipe can be substituted with what you have on hand. The fresh bread-crumb topping is delicious and easy. Tear what ever bread you may have (or rolls) and mix with the butter according to the recipe.
