Bacon and Tomato Cups

So good! I used crescent roll dough and form fitted into the cups. I also used real bacon pieces found in the salad toppings aisle. They actually tasted more bacon-y than using the real thing and so much easier!

Fried Venison Backstrap

I am a chef on a south Texas deer ranch and I always chicken-fry the backstrap. I cook it the same, but chop it differently. I cut the backstrap into 3 inch chunks and pound it flat just like a chicken fried steak. Soooo good!!

So good! I made minor changes to suit my tastes. I didn't add the tomatoes or garlic (didn't seem like a "breakfast" ingredient to me) and I piled them high on flour tortillas. Great recipe.

Southwestern Hot Dogs

Yum! When my fav weekly show comes on , my family know it's hot dog night. This was a great change of pace. (never thought about cutting the dogs open) I used about a tablespoon of taco seasoning from a packet. Yum-o!!

Broccoli Chicken Salad

Yum! Healthy and hearty. I, too, added turkey bacon and rice vinegar instead of red wine. I added salt and pepper and to make it more into a meal, I added cooked and cooled pasta.

Over the Top Nachos

I have been making this for years, it is sooo good. I season the meat with taco seasoning and leave the onions raw to sprinkle over top. I use processed cheese or Tostito's cheese dip and hat it on the stove along with the refried beans. This makes the beans and cheese easier to evenly distribute over the chips. I bake it, then I top with what I have on hand- lettuce, tomatoes, onions, sour cream guacamole, etc. Great to make and eat in front of the TV with a movie or the game. Yum!

Creamy, flavorful mashed potatoes. I made ahead the day before and added chicken broth because I knew baking would reduce the moisture. I added cheese the last 10 minutes of baking. Comfort food!

Taco Pumpkin Seeds

Tastes like fall! I seasoned with McCormick's taco seasoning, garlic salt, and EVOO. Baked for 1 hr at 375. Crunchy, seasoned, and a little salty- perfect!

Refried Beans Without the Refry

Very flavorful. Beans are hard to flavor, the gravy or juice is flavorful but the bean is dry. I live in south Tx where everyone makes refried beans and I can't believe that this is actually as good as everyone says. I followed the recipe except for the water. I added enough water to cover the beans and added water throughout the day, as per other reviews saying too much water, etc. I tasted the beans whole and they were ok, but once I mashed them, they delivered! I can't rave enough.

Aunt Fannie's Dinner

I look for recipes by ingredients I have on hand. I used ground turkey and seasoned it with a seasoning packet I found in the supermarket that sounded good that I liked. I used pasta I had on hand. So, based on my twikes, I rate this a 5 star. I put all the ingredients together in a casserole dish and topped with the cheese I had on hand and french fried onions ( I usualy use these for Thanksgiving green bean casserole) to give it a crunch and baked it until the cheese was melted. It was an easy, delicous, filling weeknight meal. - Honestly, I was penny pinching with my cupboard ing. and it was awesome. So, I suggest to others- use what you have and make this your own! Yummy!

Chicken Fried Chicken

Yum! Recipes like this are meant for the cook to add their own spices/flavors. I added cajun seasoning and served with white gravy, ranch dressing, and bar b que sauce. The crunch of the chicken was great and the cajun seasoning adds a little kick. But the best part is mixing up the dipping sauces to vary the flavor.

This is a very different dish. It was good. I doubled the sauce and added cream of mushroom soup to thicken the sauce to a gravy consistency. Tomorrow I will add the sauce to pasta for lunch.

Salisbury Steak

This was pretty good, but not spectacular. I followed the recipe and doubled the gravy. I thought the gravy was on the salty side and it needed something. Oh, and I switched the breadcrumbs for French's fried onions.
