Love it! I've made this multiple times, and its now becoming requested. I don't believe an substitutions are necessary. This recipe is great!

Overall, my meal team liked it. The larger pieces of eggplant were still a little tough in the center, so I would recommend 7-8 per side in the oven. Besides that it was well received, even by the guys who insist on meat at each meal. Will definitely make again.

I think the servings might be a little off. I got about 15 bowls of soup out of this recipe. However, it was so good that it was probably only at 4 different sittings for 2 people each. Also, in an attempt to reduce the fat, I substituted whole milk for the heavy cream, and it was still pretty thick. All around...aces!
