Delicious Raspberry Oatmeal Cookie Bars

Good but not amazing though I tweaked it a bit to make it healthier. Doubled up the recipe and used whole jar of rasp jam w/seeds (13 oz). For the bottom crust I added 4 tbsp margarine, 1/2 c applesauce, and 1/4 c egg substitute. Ended up being way too much liquid as the bottom was super sticky--I got it pressed into the bottom of the greased pan and baked for 7 min. Don't use too much on the bottom as it comes out pretty thick! I definitely didn't have enough for the topping so I made another topping batch but this time used all margarine so it more crumbly. Next time I'm going to slowly add the applesauce/egg combo until desired consistency is reached. By the way if you are not a huge sweets person a little jam goes a long way. Microwave jar first and then spread. Baked the whole thing for 25 min and it came out perfect!

Dessert Pizza

Delicious, super simple, and a guaranteed crowd pleaser. I was making it for 6 so I used 1/2 roll sugar cookie dough pressed into a 9 in cake pan. Try to make it even and leave a rim for the dough to expand. For the topping, I really wanted to avoid cream cheese yet wanted something more substantial so I used 1/2 c lowfat vanilla yogurt and whipped in 2 heaping spoonfuls of lite whipped topping until smooth. This was airy and creamy without being too sweet. I frosted the cookie and refrigerated overnight and the topping set up really well. I wouldn't put the fruit more than 4 hours before serving bc it can get soggy. I have requests to make this for future birthday parties now!

Cake Mix Cookies IV

The taste is really good but I wanted the consistency to be more like a cookie than cake. I bought reduced sugar yellow cake mix that called for the addition of 1 cup of water so it could've been this that changed the texture. I used one box mix with 1/4 c apple sauce, 1/4 cup oil, 2 eggs, and 3/4 c water. Added mini choc chips and baked for 10 min. The cookie is super light, moist, and puffy. Next time I will try it with butter and a different mix.

Ashley's Chicken Katsu with Tonkatsu Sauce

very easy and tasted just like a restaurant's. Definitely pound thin to ensure even cooking and I just seasoned the chicken thighs with salt and pepper before the flour step. Also the sauce makes way too much and is tart. Here's my recipe for sweeter tonkatsu sauce: 2 tbsp each of ketchup, worcestshire sauce and soy sauce. 1 tbsp hoisin sauce and add about 2 tsp of white sugar to sweeten it up. Boil until sauce thickens and use as a dipping sauce. Overall a lovely recipe.

Blueberry Scones

very easy to make and subbed dried cranberries for the blueberries...if you want a sweeter scone definitely add the extra 1/4 cup sugar. Also very sticky batter ( i didn't add extra 1/4 c flour) so made an easy drop scone instead. Watch the baking time as to not overbake

Quick Clam Chowder

Apple Turnovers

Delicious and so easy to make. I used 4 fujji apples, 3/4 c unpacked brown sugar (and still it was a bit too sweet). To make smaller turnovers, I cut each sheet into 9 and diced the apples into smaller pieces. Also use a fork to press the edges, brush with egg wash and cut 3 vents in the top before baking.

Camp Cornbread

too easy and deliciously chewy...the creamed corn is a great addition as the added corn texture makes it that much better. I left out the added sugar since the corn muffin mix had sugar already. Great recipe!

Chickpea and Pasta Soup

so easy with ingredients already in the pantry. Added chopped celery and needed to simmer longer until they softened. Also instead of pasta, made a side of rice to throw in the soup, subbed dried basil for the rosemary, and used veggie stock.

so easy to make and delicious to boot--crispy edges and chewy soft middle. I baked them at 375 for 9 minutes and let them cool on the sheet for 1 min and pulled them off to cool completely.

Baking Mix Apple Crisp

baking mix always turns out a bit salty so add more sugar accordingly. Also toss the apples in sugar and cinnamon before hand and definitely peel them. I left the peel on due to laziness and it just wasn't the same

Nana's Apple Crisp

super super easy...used half brown sugar and 1.5 tsp of cinnamon total. Tossed apples in some of the brown sugar and a sprinkle of cinnamon before placing in pan. If crisp looks too dry during baking sprinkle with a bit of water.

4 for simplicity along with taste...used multigrain baking mix, Olivio, and 1/2 cup choc chips...turned out a bit salty maybe will add vanilla next time. Still wonderfully easy recipe to use up all that baking mix in the cupboard

Baked Asian-Style Honey Chicken

the BEST recipe for honey soysauce chicken ever. It was so simple..marinated thighs/drumsticks/wings for 3 hours and made extra marinade for basting half way thru. Definitely use foil to line the pan though. Also added a sprinkle of sesame seeds on top..we couldn't get enough of this.

Tofu Lasagna

sooo easy and healthy and the tofu texture came out great! My bf couldn't even tell the difference. I used no boil lasagna noodles, added 1/2 lb ground chicken and mushrooms and only put cheese on top to cut down on fat. A little more salt and pepper and definitely use 1-1.5 jars spaghetti sauce. Great recipe!

Yogurt Chocolate Chip Cookies

these are the best "healthy" cookie i could find and they taste great too! This time around i subbed the shortening with better n peanut butter which worked amazingly. Also used 1/4 c less flour and 1/3 c quick oats to give it some texture. If you are baking with better n peanut butter grease the cookie sheet bc it sticks
