Easiest Brownies Ever

Reviewed: Mar. 14, 2009
These are excellent brownies. I made these because I didn't have any chips in the house. They turn out almost like a fudge. They are not cake-like brownies, if that is what you are looking for. I didn't have the problems that others reported with being to grainy or floury. Just made sure you cream the butter and sugar well, and stir the flour in slowly. A chocolate lovers dream.

Cranberry Chicken II

I can't say enough good things about this. This is very tasty and savory. We ate over rice. Very easy to make, and a good tasty filling meal. Next time, I'm going to throw in some frozen veggies.

Pork and Green Chile Casserole

Reviewed: Apr. 3, 2007
This was very yummy. A great comfort food. I added some chedder cheese into the mix, and then topped with more chedder cheese. I enjoyed the texture of the brown rice in this dish. I used only 1 can of green chili's and halved the cumin. It was still awesome. I will make this again.

Raspberry-Glazed Rosemary Chicken

Reviewed: Jan. 4, 2007
This was pretty good and tasty. I left out the broth and just made the glaze. Baked in over for 15 min, then added glaze, then cooked 15 min longer. Searved over rice. It had a very nice flavor.

Spiced Orange Chicken

This wasn't the best. The sauce turned out way to thick and sort of bland, and it needs some veggies. Just okay.

Microwavable Chocolate Fudge

LOVE IT! Easy, fast, and delicious. I left out the marshmellows, and it took a little longer to set up in my fridge. I thought it might be grainy, but it turned out really smooth and delicious. I gave out for Christmas.

Spanish Rice Bake

Reviewed: Jan. 4, 2007
This was great. My husband hates Spanish rice, so I added a can of red beans to the mix, served with tortillas, and called it rice and bean burritos. He didn't know the difference. Very good and easy.

I thought the vinegar taste was a bit strong. My husband loved it. I thought it was just okay. I was nice on the garlic mashed potatoes I made to go along with.

This is one of the best receipes for hot german potato salad that I have found. I have to make a huge batch, and it's still all gone! Also good leftover cold.

I baked this in the packets in the oven at 450 for an hour. It turned out pretty good. This is a basic, easy meal. Next time, I might add some drained pineapple for punch.

Moroccan Chicken

Reviewed: May 24, 2006
This is just a so-so dish that has the potential to be great. Follow the review posted by SILLYSARAHC123 and double the amount of spice. I left out the chickpeas, because I don’t like them, but other than that I followed the recipe exactly. When cooking, the smells are delicious. I couldn’t wait to dig in. However, the end result is a little disappointing. It was pretty bland and flavorless. I added salt and pepper at the table and that helped quite a bit. Next time I make this, I’m going to mess around with the spices, doubling them. I think I’ll add some cinnamon, salt and pepper. Otherwise, a good start.

Pork Chops with Raspberry Sauce

Reviewed: May 15, 2006
The raspberry sauce is what makes this dish perfect. I used two spoonfuls of frozen OJ concentrate, because I was too lazy to mix the juice up. I think this actually added to the dish, giving it a deeper orange flavor. The tangy sauce goes perfectly with a mound of steaming homemade potatoes. Even my toddler loved this dish.

Jimmy Dean Sausage Stuffed Pasta Shells

Reviewed: May 15, 2006
This is a good recipe. It is relatively easy to make, except that it dirties 2 pans, 1 mixing bowl, and the casserole dish. To ensure shell success, don’t overcook the shells. Cook them at the bottom end of the suggested cook time. This will keep the shells from breaking while you fill them. I’ve found that a plastic spoon works great for inserting the stuffing. I did not have sausage on hand, so I substituted a pound of hamburger and added spices. I’m sure the sausage would give it a more complex flavor. I also enjoyed the green pepper in this dish. I had very little meat left over, so I was pleased that the proportions seemed correct. It made a very large casserole dish.

Apple-Raisin French Toast Casserole

Reviewed: May 4, 2006
I made this for a group of people and it turned out really well. I used a loaf of cinnamon raisin bread. I mixed the bread into the egg and butter mixture instead of pouring it over the apples. I forgot to make it the night before and leave it in the frige, but it still turned out great. I don't like soggy bread, and this wasn't soggy at all.

Easy Ham and Cheese Appetizer Sandwiches

Reviewed: Apr. 19, 2006
This did not turn out the way I expected at all. I only used 1/4 cup butter, and it was still way to much. The bread turned out all mushy and icky. I think if you just poured the butter mixture over the top and then browned, it would be better. Plus, the butter overpowers the mustard. Leave this at home.

Chicken Focaccia Sandwiches with Chutney and Caramelized Onions

Reviewed: Apr. 9, 2006
This recipe was absolutely, can’t keep my hands off of it, fabulous. The mango chutney and the mayo/mustard sauce merry together in a zesty and palate pleasing way. The only thing I did differently was to marinate the chicken breasts in a teriyaki sauce after I had pounded them flat. This is by far the best sandwich recipe I have ever made. You must try this! I served this with roasted sweet potatoes and apples. The flavors went so well together.
