Eggplant Supper Soup

Very tasty. The first soup we've made this year. We left out the tomato and it had a very hearty flavor. We are just tired of tomato after all the zuchini dishes we've had.

Foil Barbecued Trout with Wine

Wonderful. The fish was divine. I decided to add broccoli and shitakes to the packet - that was a mistake - they absorbed all the wine and the flavore was overwhelming. The fish as cooked in the recipe, however, was perfect.

Noodles and Veggies

Don't get me wrong, I've made this a million times even though I know it's a 2 star. But it's so easy, and I feel like I'm "cooking" so I feel less guilty about eating boxed junk. But, it is what it is. Depending on how saucy the noodles are, I sometimes also add canned chicken or tuna.

Any version of fried cheese is great in my book, but these become to die for if you add some cooked ground taco meat. If you seal them in a triangle shape, you can get the most filling in them.

Grandma's Slow Cooker Vegetarian Chili

You cannot go wrong with this recipe. If you don't have something, just leave it out. If you want to get rid of a random canned vegetable, throw it in. Great for stretching a buck and cleaning out the pantry.

Roast Chicken with Rosemary

Adding a quartered lemon to the cavity definitely adds to the flavor and prevents drying. Also, roast breast side DOWN for the first 1 1/2 hours then turn, so as to avoid overcooking the white meet.

These were amazing - so easy and incredible flavor. I too subbed vanilla for the water. The only reason I can't give 5 stars is because they weren't particularly pretty.
