One of my favorite things to make when I'm the only one home. Easy, cheap, and hits the spot.

Noodles and Veggies

Don't get me wrong, I've made this a million times even though I know it's a 2 star. But it's so easy, and I feel like I'm "cooking" so I feel less guilty about eating boxed junk. But, it is what it is. Depending on how saucy the noodles are, I sometimes also add canned chicken or tuna.

A total man pleaser. So easy and tasty. This really hit the spot now that the weather's colder. Potatoes on the side are a must.

Everyone at my house found this to be way too salty.

Pasta e Olio

I make this often when it's just me for dinner. Stirring in some parmesan cheese right before serving adds the right amount of zing and salt.

This is so easy and comfort food at its best. I like to add a small can of mushrooms.

Mexican Wontons

Any version of fried cheese is great in my book, but these become to die for if you add some cooked ground taco meat. If you seal them in a triangle shape, you can get the most filling in them.

Grandma's Slow Cooker Vegetarian Chili

You cannot go wrong with this recipe. If you don't have something, just leave it out. If you want to get rid of a random canned vegetable, throw it in. Great for stretching a buck and cleaning out the pantry.

Roast Chicken with Rosemary

Adding a quartered lemon to the cavity definitely adds to the flavor and prevents drying. Also, roast breast side DOWN for the first 1 1/2 hours then turn, so as to avoid overcooking the white meet.

Really good. I just left the lid off the crock pot for the last hour, instead of transferring to the oven. I'm lazy.

Really great. My only tip is to not fully shred the meat - leave some chunks or else it gets too cafeteria-like. :)

These were amazing - so easy and incredible flavor. I too subbed vanilla for the water. The only reason I can't give 5 stars is because they weren't particularly pretty.

These are so good. I douse the entire ball in chocolate, unless I need to distinguish it from other round, chocolate covered cookies (such as coconut) at holiday time.

Restaurant-Style Hashbrown Casserole

Reviewed: Dec. 12, 2008
I have made this several times and it is always a crowd pleaser - especially the men and kids. I've found that any "cream of" soup works well, except cream of celery. I also like to cook it halfway, give it a stir, and add the cornflakes and butter topping suggested by other reviewers. Wonderful! If this accompanies burgers or other grilled foods, I use season salt, if it's a more traditional/comfort meal, I'll use regular salt.
