Fruit Oatmeal Cookie Bars

I really liked the oatmeal crust part though wasn't all that impressed with the recipe itself. It was too sweet for me. I used an 8 X 8 pan and did part strawberry jelly and part apricot jelly. I think you'd definitely have to double it to make enough for a 13 X 9 inch pan.

Pumpkin Pie Pudding

I was trying to find a way to use up half a can of evaporated milk and came across this recipe (which I halved). I took another reviewer's suggestion of cooking it on the stove for a hour and it turned out just fine. My husband particularly liked it.

Sensational Chicken Noodle Soup

Pretty good soup and very versatile. I doubled the chicken broth (I was going to use three extra cups and was glad I put in the extra fourth one), shredded one large chicken breast, added two chopped up potatoes and left out the celery. I also added an additional quarter cup of the pasta. It was so easy to make which was nice since I felt a little rushed for time.

Mexican Casserole

This is a pretty good and easy to make casserole. I took others' recommendations and sauted onion and garlic in the olive oil and then added the chicken. I also left in some of the liquid from the corn and added a cup of cooked, instant rice to the chicken mixture just before putting the casserole in the oven. There's a lot of versatility to this recipe...you could add olives, green chilies, anything you'd put in a burrito or taco. I topped individual servings with a dollop of sour cream.

Pumpkin Chocolate Dessert Cake

I brought this to our Thanksgiving gathering and everyone seemed to like it. As others suggested, I used evaporated milk in place of heavy cream. My husband thought it was good but didn't think it qualified for a five star rating.

Bar Harbor Cranberry Pie

I made this as a Thanksgiving dessert and enjoyed it. The tartness of the cranberries was a good contrast with the sweetness of the dough. I added a tsp. of vanilla and left out the nuts (due to allergies).

Fudgy Chocolate Cream Pie

Sweet Mustard Chicken Bake

My husband really liked this and it was so easy to prepare. I cut the recipe in half and used a tblsp. less of the butter. I also increased the amount of mustard by a tsp. or so.

Slow Cooker Sausage with Sauce

I used smoked bratwurst sausages and left out the green pepper. We had it on toasted hoagie rolls with melted mozzarella cheese. I am freezing the leftovers to use as spaghetti sauce as others recommended. This was definitely an easy dish to put together and the results were pleasing!

Pumpkin Loaf

Very good bread! I used about 6 oz. of cream cheese and added a half tsp. of pumpkin pie spice. The bread turned out moist and is great warm with a little butter.

Very good dish and it makes a lot! I left out the celery and used Italian seasoning in place of dried savory. I served it with sourdough rolls, which made a nice meal.

Homemade Albondigas Soup

Pretty good soup...I added some fresh bread crumbs to the meatballs, although they still almost fell apart. I left out the celery but otherwise followed the recipe. As others suggested, I made Mexican rice as a side dish (which I added to my own bowl of soup and liked the soup a little better).

Allana's Excellent Potato Soup

This soup was so good and very easy. I substituted 8 oz. of the chicken broth with juice from the ham, sauted minced garlic with the onion and ham and used a half cup of heavy whipping cream in place of the milk. I used cream of chicken soup instead of cream of celery because that's what was in the cupboard. And, I mashed up some of the potatoes. I'd definitely make this again!

Spinach and Sun-Dried Tomato Pasta

A quick and easy meal to assemble. I added a large chicken breast, which I chopped into small pieces, and about a cup of fined chopped mushrooms. I used medium shells in place of penne (because that's what I had on hand). I served it with salad and bread and everyone seemed to enjoy it. It might have been a bit better with more of a sauce.

Glazed Lemon Bundt Cake

The cake had a mild lemon flavor and was very good. The only change I made was to substitute about a quarter of a cup of the milk with fresh lemon juice.

Crispy Rosemary Chicken and Fries

I wasn't all that impressed by this recipe. It might be because I don't really like thighs...I used a mix of thighs and boneless, skinless chicken breasts in this recipe.

Iced Pumpkin Cookies

These taste great! I substituted half a cup of white sugar with brown sugar and used 1 1/2 tsp. of cinnamon and 1 1/2 tsp. of pumpkin pie spice instead of the listed spices. I'm bringing them to a party tonight!
