Brownie Mix in a Jar II

Reviewed: Dec. 18, 2009
Excellent recipe! This is the first jar mix I have made and I learned very quickly that spaghetti jars don't work because they are too small. I added lib really quickly by putting the nuts in a baggie of Syran-Wrap and hanging it off the side with the same ribbon that held the instructions. I thought it looked lovely!

Gingerbread Cookies I

Reviewed: Dec. 13, 2009
The only thing I did in addition to the recipe, was refrigerate the dough 1/2 hour before rolling it. This seems to work with all of my cut-out cookies. Because of this, I didn't add additional flour like some other reviewers suggested. Fantastic recipe!

Vegetarian Refried Beans

Reviewed: Aug. 6, 2009
I put the dried beans in a pressure cooker to speed up time and use less energy. I soaked 2 cups dried beans overnight and processed in the cooker for 6 minutes the next day. I then drained the water and added the rest of the ingredients to the beans. I used a potato masher, but should have used a food processor for a smoother consistency. Then I added one cup of the juice/water left over from the cooker and let everything simmer for about 30 minutes. It was okay, but I thought it lacked something. Maybe it didn't taste right because I used the pressure cooker and didn't boil them for hours.

I used lime juice in place of the tamarind pulp. I soaked the rice noodles for 1 hour and they were still kind of crunchy. They need to be cooked...

Excellent! I baked the potatoes one day, put them in the fridge, and then made the filling the next day. They turned out wonderful! I added cheddar cheese and onions for extra flavor.

Fresh Rhubarb Pie

The only change I made to the recipe was omitting the butter. The pie was not runny and the crust was not soggy. The absolute best pie I have ever made!

The Best Bean and Ham Soup

I didn't have ham so I used some leftover kielbasa sausage sliced and fried in olive oil. It was phenomenal!! It had a chili consistency and tasted like really good baked beans. I would definitely recommend!

Brunch Scones

Very easy scone recipe! The egg yolk basically gives the scone a yellow look and a slightly eggy taste. I used frozen blueberries and they turned out great!

Easy Mint Chip Ice Cream

Not enough mint flavor. The chocolate sank to the bottom--could it be from the whipping cream? Not sure how long to whip the cream.

I probably would've only given it four stars for taste etc...but I had to throw in the extra one for something completely different and outside of normal recipes :-)

Spiced Slow Cooker Applesauce

Reviewed: Oct. 13, 2008
This recipe is pretty much like apple butter. I wouldn't recommend eating this plain because there is just way too much sugar in it. I suggest using it in oatmeal as another reviewer suggested. I make about 50 quarts of applesauce a year and found that sugar never needs to be added if you use sweet apples to begin with and a cinnamon stick per quart is sufficient enough for spice. Sweet apples: gala and fuji
