Kale and Banana Smoothie

I really wanted to like this...but I couldn't get past the strong kale taste. I used nonfat milk and didn't have any flaxseed (not sure if the flavor would have been very different). Anyway, I feel healthy for drinking it!

Cream of Chicken with Wild Rice Soup

Everybody loved it! The only things I changed were; butter instead of oil, added garlic, used portobello mushrooms, no celery.It is very labor-intensive, so make sure you have enough time or, like I did, do your broth and chicken ahead of time.

Best Big, Fat, Chewy Chocolate Chip Cookie

I love these cookies! I added 1 cup of pecans and they turned out great. Nice to have a less "cakey" chocolate chip cookie for a change. It's my new favorite recipe.

Bill's Blue Cheese Dressing

This is a great recipe for blue cheese dressing, and easy too! I even used fat free sour cream and will try fat free mayo next time. The only thing I would change is to cut back on the salt, maybe to 1/4 tsp. Some may like it the way it is, though.

Crab Stuffed Haddock

I used this recipe with halibut by slicing the fish in thickness and putting the stuffing in the middle, then putting the rest of the stuffing on top. I used corn bread stuffing bread instead of the cubes. It turned out great!

Carrot Raisin Muffins

I thought these were delicious-but I made a couple of changes. I had leftover carrot pulp from my juicer, so I used 1 1/2 cups of that, which probably added more moisture. I also used 1/2 wheat flour and 1/2 white flour. Also, be sure not to over-cook them. Other than that, I did everything to recipe and we all loved them!

Cincinnati Chili I

Everyone in my family loved this chili, especially the kids! I served it on top of whole wheat spaghetti. I changed it to a 12-serving recipe, though and the proportions added too much broth. 1 1/2 cans would have been enough.
