I bought a bag of cole slaw mix and added canned mini shrimps instead of pork. I used a little too much salt (didn't measure salt), but they otherwise tasted good. I'll try again tomorrow using pork and less salt. Best I've tried. Thank you.

Ricotta Pie

I scaled back this recipe and made this pie for my parents on Thanksgiving Day. They said the taste was good, but I over-cooked it. Because the pie seemed loose, I left it in the oven too long. I now realize that when the knife is clean and it's still loose, take the pie out of the oven and let it sit. I will make this again on Christmas morning. Thank you.

Pancakes I

Easy Pancakes

I've never made pancakes and wanted to give this a try. Unfortunately, I did not read the prior reviews. I knew something looked wrong with the batter and now I know why... too much b. powder. They tasted alright, but what doesn't taste good when you add tons of butter and maple syrup. Ugh.

I followed this recipe exact, but nobody wanted it. My brother in law tried a very little but would not go near it again and said it was bland. Nobody else would try it. I'm disappointed. :o(

Harvest Pork Stew

I made some changes only because I forgot the recipe and I was going off memory. I cooked the onion with butter and shut off flame when onion was soft. I then added a handful of flour. The mixture was sticky. I then boiled broth (same pan) and reduced heat to let vegetables & apple cook/simmer. (I was using leftover pork so I skipped that part) I also added celery for color and a few shakes of red pepper flakes for a bite. I will make this again & think it's better than beef stew... in my opinion. Thanks.

Italian Sausage Soup

I made a few changes: used chicken broth, red pepper flakes instead of black pepper, chopped a few plum tomatoes. I was very excited because the soup looked great & appetizing. The only problem is only a few people went for it. Those who did... loved it.

Easy OREO Truffles

I tried melting a large portion of chocolate morsels in my microwave when all of the sudden my smoke alarms went off. Smoke filled my kitchen. I melted the remaining chips with half a stick of butter on the stove. One whole stick of butter would have been better. They turned out fine, the kids loved them, but I felt weird biting into a ball of cream cheese. Blech. I don't think I would make these again.

King Crab Appetizers

I made these Christmas morning with phyllo dough and they were ok. As I was putting them in the oven, I thought about using won ton wrappers next time.... then I realized these are crab rangoon with a fancy name.

Juiciest Hamburgers Ever

I made these last night and everyone loved them. They're moist rather than juicy & I think it's the evaporated milk that helps. It was difficult cooking them, but they didn't fall apart. (also, they looked a little charred, but turned out fine) The burgers had plenty of flavor & I would make again. P.S. these burgers taste similar to a recipe I had while on the Atkins diet.

Sweet Potato Casserole I

My review is mixed. I was sure this was going to be a hit because with all that butter, sugar, vanilla, and pecans, how could you go wrong? My mom said it was nothing special and I was literally shocked. On the other hand, my sister and niece ate half a pan. They thought it was out of this world. I did not have any.
