Asparagus Chicken Fajitas
This was absolutely fabulous. I didnt change or alter anything, made the recipe exactly as listed and it was DELICIOUS!!!

Smushed Apples and Sweet Potatoes
Although my husband claimed to like it, the rest of this found this very bland and not very good. We all love sweet potatoes so had thought it would be impossible to not be a winner - but unfortunately, was not so good. The apple also takes much longer than the 5 minutes to soften.

Cowboy Skillet Casserole
This was really good and was enjoyed by everyone in the family. I followed the some of the suggestions given by others and added corn and also used 1 can of fajita pinto beans instead. Plus I used chipotle pepper seasoning instead of the fajita seasoning since dry fajita seasoning is not available at my local grocery.
