About this Cook
I'm a 33-year-old mother of two boys...16 months apart in age, so I stay pretty busy! My biggest challenge right now is to get my notoriously picky 5 and 3 year old boys to at least TRY to eat something I've cooked versus begging for PB&J, Chef Boyardee, etc.
My favorite things to cook
I love cooking, but REALLY love to bake! Strange thing is, I don't eat much of what I bake because I try to limit my sugar intake. :) I keep getting requests to "make that so-and-so cake again" or "those chocolate chip cookies you made last month would be good right about now...hint hint" so I keep on baking for my friends and family. As far as actually cooking meals, I love casseroles, old fashioned cooking, and just mainly cooking the way my grandmother and great grandmother (who taught me how to cook) used to cook. (Pie crusts made with lard, fresh snap beans made with fatback, etc.)
My cooking triumphs
A cake shaped like a Christmas present that I made for our work Christmas party about 5 - 6 years ago. It was from the front of a Southern Living cookbook. Took me nearly two days to make it, but it was so beautiful (and delicious!) I don't think I'd ever make it again though...it was a LOT of work, and cost me a small fortune for ingredients and specialty utensils I didn't have.
My cooking tragedies
I've never really burned anything or ruined anything, but I seem to have mishaps while cooking. (i.e. draining a pot of boiling potatoes when I was making potato salad, and ending up pouring the boiling water on my stomach was leaning against the counter and "missed" the sink, reaching into a 400 degree oven to remove a pan of corn bread and forgetting to use a pot holder, and grabbing the cast iron skillet handle bare handed, and most recently, frying zucchini and dipping the last three fingers of my right hand into boiling oil as I was dropping the zucchin in.)

Butter Chickpea Curry
This was good and very easy. I'm not a huge fan of spicy food, but this had just enough spice. My only complaint is that it needed more sauce! I added a can of tomato sauce and a teaspoon of sugar instead of the soup, as the recipe called for.

Lemon Chiffon Cake
This cake was okay. The texture was perfect, albeit a little dry (I read *after* the fact that the baking time should be decreased a bit). The flavor was very similar to a pound cake--just bland and cakey--not overly lemony like I was hoping (I even added extra zest). The frosting was nice--the texture was great and the flavor was good, although it could have used more lemon, again. Overall, this cake *probably* will be eaten, but it won't go as quickly as other things I've made. It was a lot of work. I won't be making it again. Sorry! Again though, the texture was awesome--just don't bake it the full 60 minutes or it'll dry out.

Roast Sticky Chicken-Rotisserie Style
Ok, so I haven't "technically" made this recipe yet, but it's identical to a recipe my mom used to make when I was a child, and it is WONDERFUL! My bird is marinating in the fridge right now. This is excellent!
