Portobello Mushroom Sauce

Reviewed: Feb. 24, 2008
This sounds like it should be delicious. When it was finished (pretty easy to make) I tried it and thought 'uh oh...it's not that great'. Once it was on the steaks, though, the flavour somehow complemented the steak wonderfully. My only issue was the port I used was pretty strong, and I probably didn't cook it for long enough, as it was a predominent flavor. It also doesn't keep well with leftovers.

Ultimate Corn Bread

Reviewed: Feb. 24, 2008
This is an absolutely wonderful receipe -except for one thing...the 9" square baking pan is not big enough. I put it into a larger lasagna baking dish and it fit perfect, no overflow or anything. It is definitely a sweet, cakey dessert-type corn bread - which is exactly what we like! I've made it three times in two weeks!

Amazing Crunchy Tofu Salad

Reviewed: Apr. 9, 2007
This was absolutely delicious! It was completely filling (even my husband said so!) which never happens when I eat salad for a meal. I don't think I followed the recipe quite right - but it still turned out amazing. I breaded and fried the tofu, removed it from the pan, then added the soya/corn startch mixture to the hot pan so it was quite thick - a good dressing!

Potluck Rice Pilaf

Reviewed: Feb. 10, 2007
This was a very good recipe! My family, whom I served this to along with ribs and corn, said they thought it was a gourment meal. The rice really added to the menu. I used a bit more soya sauce & bouillon and cut down on the water. Toasted almonds were absolutely key!

Belle and Chron's Spinach and Mushroom Quiche

Reviewed: Nov. 26, 2006
Very flavorful. Everyone want's to experiment with bacon quiches now. Would have been a four star except I followed the recipe close to exactly, and made two quiches, and it was very runny and I cooked it for at least twice as long as it called for.

Fettuccini with Mushroom, Ham and Rose Sauce

Reviewed: Feb. 6, 2006
Upped this recipe for 6 people and it made enough for 10! It was very good - but could have used more kick. We like a bit of spice and this didn't have it. Was very good the second day (if not better) when heated up in the oven. The third day in the microwave should have just been thrown away. Overall, I would make this again, but add a few spices to kick it up a notch and make WAY less.

Boilermaker Tailgate Chili

Reviewed: Feb. 6, 2006
My husband and I made this for Superbowl Sunday. Needless to say it was a big hit. We cut back on the beans (we both aren't too keen on them) and spices. We figured if someone wanted it hotter, they could add extra hot sauce themselves. Turned out great. The cheese and frito toppings were excellent! Also added a dollop of sour cream on top. Who knew toppings on chilli would be so great! Would make this again for any big-game day.

Tortilla Rollups II

Reviewed: Dec. 22, 2005
The best rollups ever! I have made this recipe repeatedly for work and family functions and everyone loves it - I always get requests for the recipe. At Christmastime I use red and green tortillas for a more festive look. If you like a bit more kick to them, add some taco seasoning to the mix. This is an A++ recipe!

Basic Crepes

Reviewed: Dec. 18, 2005
Extrememly easy to make - and I usually burn things like this. The batter was very lumpy at first. I had to give it a lot of elbow grease to get it thinned out (don't have a mixer.) I upped the recipe for 8 crepes (but it made 10 smaller ones.) Used the sugar and vanilla extract like others had said. These were somewhat rubbery. Next time I will try putting them in the fridge like others suggested. Will experiment with this one again and see if I can get the texture right.

Fresh Pear Pie

Reviewed: Nov. 7, 2005
Used Bosc Pears for this recipe - because they were bigger and easier to peel. Also used golden-sugar instead of white and extra cinnamon. I added more lemon juice because I didn't have lemon zest. It tasted like a tarter version of apple. Everyone who tried it thought it was great! Will definitely make this again.

Broccoli and Sausage Cavatelli

Reviewed: Nov. 7, 2005
My hubby substituted Green Peppers and Mushrooms for the Broccoli, since that is what we had on hand. He dilikes Parmesean, so we used a mixture of (very) old cheddar and Marble. It probally would have been tastier with fresh Parmesean. We used Turkey sausage instead of italian and it was just as good - if not better. Will make this again using any veggies we have on hand and Parm cheese.
