Best Cream Of Broccoli Soup
Definitely one for the colder months rotation of recipes!! I used a little more broth because it didn't seem like enough (it could have been) but I just added a little more roux and I used 2cups of light cream in place of the milk and added 2 cups of shredded monterey jack cheese. I also omitted the celery and didn't miss it a bit. For me it was totally unnecessary to dirty my food processer and I just used a potato masher till my desired consistency. I left it a little chunky. Absolutely delicious!!!

Tantalizingly Tangy Meatloaf
Great recipe...however I did use ground turkey in place of the ground beef which went very well with the pineapple flavor. I also doubled the sauce and added some to the ground meat mixture to moisten it up. I think I will try it with crushed pineapple next time to cut back on some of the sugar. Served it with corn and sweet potato wedges for a healthier yet still incredibly tasty version of meatloaf and potatos!

Fast and Friendly Meatballs
So simple but absolutely delicious with very minow tweaks. Adding water is a must to get the breadcrumb/egg mixture blended well with the meat and it also keeps them very moist. I only added garlic powder but you could add any seasoning you like. I have doubled the recipe and mixed 99% lean with the fattier ground turkey and it works well. You definitely need some fat.
