Authentic, No Shortcuts, Louisiana Red Beans and Rice

I do not know what I did wrong....I have never used dry beans in anything so, when it said soak overnight I assumed it meant for about 8 hours...did it mean 24 hours?!? I soaked for almost ten hours and then followed the directions exactly...21 HOURS later with the slow cooker set on low, my beans were still pretty hard. I cranked it up to high and left it for 2 more hours, then the beans were edible and actually not bad. However, after all that time, the meat - well lets just say the meat was interesting. We just picked the meat out and ate the beans with rice. Way too much time for something that should be easy....

Manicotti Italian Casserole

This was such a huge hit at home and at work! I have made it twice, one time I followed the recipe exactly, next I played with it a little - great both times. Try more veggies, less meat, more cheese, almost anything would work. We will do this again and again.

Smothered Mexican Lasagna

This was good but I did adjust the amount of taco seasoning (I thought it might be too much because I did not have quite 1.5 lbs. of meat). The rest of the family (picky guy and 4 yr old) really enjoyed it. We will make again.

Roasted Roma Tomatoes and Garlic

Orange Beef & Pepper Stir-fry

This worked very well! I did not have any sherry so I used slightly less than 1/4 cup red wine vinegar and a few drops of Worcestershire sauce and it worked great. Awesome the next day too.

Szechwan Shrimp

We did not like this at all. Maybe I did something wrong?! I actually made the sauce and set some aside prior to adding the red pepper so my 4 year old would be ok, there was no need to do this - the part with the spice was not spicy (for us) even. I took the advice of others and doubled the sauce, maybe I should not have, maybe that it where I went wrong.

Yummy! This was great the next day too. I was out of onion so I added more garlic - worked fine. I did not add the butter, I just served the meat over the pasta. This was a big hit with my daughter too. This will be made again.

Beef Nacho Casserole

Really, really good! I used frozen corn (not a can) and a taco mix packet (not chili powder). I added lots of garlic and one cup black beans. I will use more cheese on top next time. This was a huge hit with everyone and we ate it for lunch the next day.
