moosegator approved mashed taters

Reviewed: Nov. 28, 2009
I would rate these 10 stars if I could. These potatoes are truly excellent, delicious, and were the hit at my Thanksgiving dinner!! The balance of flavors are wonderful, I followed this as written. I made this and another mashed recipe and these were the winner by far. There was one scoop left and my brother claimed it to take home! Thank you Gderr, these are my go to mashed potatoes from now on :)

Halloween Eye of Newt

Reviewed: Nov. 2, 2009
These were very good and a very cute concept for Halloween! Everyone loved them and they are so very easy. I used a toothpick dipped in liquid red food coloring to make the "veins" for the eyes. I also put some egg mix aside not tinted green to make the pupil. Thanks for sharing this cute idea :)

Broccoli and Sausage Cavatelli

Reviewed: Oct. 29, 2009
Simply delicious pasta dish! This is quick to prepare but has wonderful flavor, perfect for a busy weeknight. I followed the recipe as written but I added 3T butter to the olive oil mix, only because I prefer some butter in garlic & oil pasta dishes. I also added some sliced roasted red peppers for some color, and they really complimented the dish. I will use this dish often, thanks for sharing :)

Cheesy Green Onion Bagel Dip

Reviewed: Oct. 29, 2009
This dip is very good and so very simple! It is a nice base for other additions as well. I chose to bake half the recipe to see how it would turn out, so it took 20 minutes at 350 degrees. The flavors blended nicely and the texture was great. It does set up quickly, so this would be nice in a crock pot to keep it warm. It is delicious chilled also. I served this with toasted onion bagels cut into bite size pieces. Ths would be a great appetizer for breakfast or brunch also. Next time I may add some diced red pepper. Thanks for sharing I will use this again :)

Hot Artichoke and Spinach Dip II

Reviewed: Oct. 27, 2009
Delicious dip! I really could eat this with a spoon, well, actually I did have a few spoonfuls. I made as written except I didn't realize I didn't have any mozzarella, so I had to top this with sharp provolone, which worked just fine. Next time I will be sure to use the mozzarella though. This is the closest I have had to what's served in a restaurant. I served this with tortilla chips and garnished with diced roasted red peppers. They really complimented the flavors in the dip very well. I will use this recipe often, thanks for sharing :)

Ozarks Potato Salad

Reviewed: Oct. 26, 2009
I really enjoyed this potato salad, such a different flavor. I do love Miracle Whip, only with certain foods, never thought of potatoes though. Only change I made was to add an extra egg, otherwise made as written. This is a very nice change from the basic mayo based salad. It's sweet yet savory and is really nice. Thanks, I will use this again :)

Hot 'n' Spicy Buffalo Chicken Salad

Reviewed: Oct. 23, 2009
Excellent salad, this truly deserves more than 5 stars in our book! We had this for dinner last night and couldn't stop eating it. I made as written, but added a few grape tomatoes that I had to use up, and some sliced hard boiled egg. The dressing is great, as I'm not a big fan of blue cheese, but mixed with the ranch it's just wonderful. My boyfriend doesn't like salads much at all, and he went back for seconds. He said if he were to get this in a restaurant he would be pleased. I knew right then that this is a keepper. I could eat this at least once a week and not get tired of it. Thanks Celeste, this one is a real winner. We will definitley make this often :)

Unbelievably Easy and Delicious Vegetarian Chili

Reviewed: Oct. 19, 2009
Super excellent chili recipe!! I love this, it's so delicious! I followed the recipe as written, and I was so skeptical being there isn't that many ingredients, but I was so wrong. So easy to make, especially during a busy weeknight. I topped this with shredded cheddar cheese, sour cream, green onions and black olives. I served this with cornbread also. We loved it, and will be making this again for sure. Thank You :)

Absolute Mexican Cornbread

Reviewed: Oct. 19, 2009
Very good cornbread, although I did make changes per other reviews. After reading the recipe, I thought the cup of butter and sugar was too much. I was looking for a more savory bread to serve with chili. I read many reviews and decided to use 1/2 cup of butter, and 1/2 cup of sugar. I used 8 ounces of Pepper Jack cheese shredded, and omitted the green chilis. I topped the bread with jalapeno pepper slices before baking. Everyone really enjoyed this. I will make this again with these changes. As written, I think this recipe would be too greasy and sweet for me. Thanks for sharing :)

Baked Ziti II

Reviewed: Oct. 13, 2009
This is a good base recipe for baked ziti. I'm glad I decided to use the entire 32 ounce container of ricotta cheese, because I don't think it would have been cheesy enough just using the 24 ounces. Therefore, I used 2 eggs instead of one. I also added about an extra cup of sauce, which really made this nice & cheesy and not dry at all. I had some leftover mushrooms & a cubanelle pepper I chopped & sauteed before adding in this also, which was really good. I also added some Italian seasoning to the cheese mixture. I would make this again, this recipe is very versatile for adding other ingredients of your choice. Thanks :)

Jay's Signature Pizza Crust

Reviewed: Oct. 9, 2009
Really good pizza crust, a bit too chewy for my personal taste though, but others really enjoyed it. I followed the recipe as written. I will make this again, but I am still looking for a particular type of thinner, crispier homemade pizza crust. Thanks for sharing this :)

Cheesy Ranch Potato Bake

Reviewed: Oct. 9, 2009
These potatoes are very tasty, I followed the recipe as written. I left the skins on and cubed the potatoes a bit larger, so they took about an hour and 15 mins to bake before adding the other ingredients. I greased my baking dish with olive oil, and after I added the dressing and cheese, baked for about 10 minutes more. I think next time I may add some finely diced onion & fresh parsley to the potatoes as they bake because I felt it lacked some flavor. Thanks for sharing :)

Easy Baking Powder Drop Biscuits

Reviewed: Oct. 1, 2009
This is a super delicious biscuit recipe. Wonderful base for many other additions, it's very versatile. I doubled the recipe and removed some dough to make plain ones before I added other ingredients. I added 2 cups of shredded Mexican blend cheese and 1/2 cup of diced jalapeno peppers (from a jar) and 1 1/2 tsp. of garlic powder. I brushed them with a bit of melted butter out of the oven. They are fabulous! I tried them plain, without any changes, and they are delicious also. I will use this simple, but great recipe often. They went very well with the soup we had for dinner. Thank you for sharing :)

Flounder Mediterranean

Reviewed: Oct. 1, 2009
This is absolutley delicious! I have made this several times, but forgot to review. I often use canned diced tomatoes instead of fresh tomatoes, and it turns out fabulous. I have also used dried basil instead of fresh, which works well also. It's simple, light but yet very robust with flavors. This recipe can be used for halibut and tilapia as well. Thanks for sharing, I love this dish :)

Fried Mozzarella Cheese Sticks

Reviewed: Sep. 25, 2009
Truly Excellent! I followed this recipe exact, except I coated these 3 times, because we prefer a thicker coating. I let them set up (dry) about 20 minutes between coatings. I left the sticks whole, I didn't cut them in half. I was told these are the best mozzarella sticks anyone has ever had from any restaurant. I was asked to make several batches so they could be frozen for later use. Triple breading these is time consuming, but so worth it. I didn't have any problem with cheese leakage either. I served these with marinara sauce for dipping. I can't wait to make these again very soon. Thank you :)

Tuna Melt Sandwiches

Reviewed: Sep. 25, 2009
Very good toasty sandwich! I really enjoyed these. I love the fact that the cheddar is throughout the tuna salad, and the flavor is wonderful. I also added some chopped dill pickle, and used potato buns. I bake these for about 20-25 minutes. I will use this recipe very often, thank you :)

Garlicky Beet Delight

Reviewed: Sep. 20, 2009
Very nice, simple recipe for beets. I found that the flavor is so much better the next day, so I recommend preparing the day before if possible. I never thought I would like beets with a garlic & oil mixture, but it's very good. I will make this again, thank you :)

Spaghetti Sauce I

Reviewed: Sep. 15, 2009
Good sauce, definitely sweet! I followed the recipe as written, the butter & sugar is what makes this stand out for sure. Nice change from the basic red sauce flavor, completely different taste. This would work well with sausage instead of ground beef also, which I will try next time. Thanks for sharing :)

Best Ever Jalapeno Poppers

Reviewed: Sep. 13, 2009
This recipe truly deserves more than 5 stars! I followed the recipe as written, and deep fried, they are fabulous! I found that blanching them first is not necessary if using a deep fryer. I tried one immediately after cooking, and it still had some crunch to it which was fine. After they sat about 3-5 minutes, the pepper was perfectly cooked. I didn't have any problems with cheese leakage, except for a few from the whole bunch I made. That was my fault for turning my back while they were frying. Very important to let these dry about 15 minutes between breading. I found that to be crucial. I will never make another popper recipe again. These disappeared so quick! Thanks for this delicious recipe :)
