Chambersburg Mustard Tomato Pie

Ok..I have never blogged before..so this may be terrible. I am from Trenton,NJ and there is (was) a small town called Chambersburg, it's still called that but..it's a bit more scary now if you know what I mean, becoming more "city" like. We have tomato pie places all over, it's not pizza it's tomato pie. There is a difference believe it or not.  I have my favorite which is Papa's, he is an elderly Italian gentleman who has his "hole in the wall" place that is my place for (pizza)..which it's not..I am just saying that so everyone understands me. He opens from 4pm to about 10pm..maybe earlier depending on whatever..I don't know. This is the only tomato pie I enjoy, and will order with anchovies, it's great. I called one late afternoon to double check about the hours because I was having a small "get-together" and we were ordering from here. Just so happens,  the "MAN" who make these pies answered the phone....
ME: Hello, can you tell me what time you're going to close tonight?
MAN: I'll be open till 9 or 10...why?
ME: Oh, I just wanted to know because I am having a small get together and we didn't want to order too late
MAN: Oh, I'll be here, why aren't you ordering now?
ME: Because I have to order later, no one is here now
MAN: Well, make sure you call back, I'll be here
ME: Ok I will, a big order too, hope you didn't run out of anchoviues again
MAN: No, we have them this time
Well, that's how it is around here..But my main topic is the Mustard Pie, but i had to tell the story of the basic tomato pie before I get there, please bear with me. This area invented a Mustard Pie. I know, sounds weird, but i happen to love mustard..Guldens, honey nustard, basic yellow, anything. I first saw this on a menu for a "bar pie" which is an individual pie that would normally feed a single person, but not me I could eat two. I was very hesitant to try it, it seemed weird, trendy, and just plain stupid to me. But no, I was VERY WRONG. I tried it and it was good....very good. Different, but it was good. I have no idea where this idea came from, but it is a staple in this area of Jersey. Mustard Pie is very common. Maybe they got it from the "Italian Hot Dog" that I have yet to submit a recipe for here...who knows. Being this is my first blog, I would like to share the basics of how to make a Chambersburg Tomato Mustard Pie...Give it your best shot.. Try it, I can't wait to hear about the results..XOXOXO...Cyn

Basic Pizza Crust Recipe...arrange in pan
Spread 1 to 2 Tblsp. of yellow mustard on dough
Top with mozzarella cheese, doesn't matter how much, whatever you like (:
Dollop with pizza sauce...as you would topping a pizza with ricotta cheese
Bake according to directions for the crust...

This probably will not taste like the pies I have had...but I just had to throw the idea out to you all, I 'm still trying to re-create Papa's great pies...I really hope some will try this, and of course let me know (:

Congratulations on your first blog, Cyndi! Chambersburg Mustard Tomato Pie sounds...interesting. I like interesting food, so there is a good chance I'll try it some day. Watch for a picture, and a SunnyB with heartburn. :D

Great job on your first blog Cyndi. Tomato mustard pie sounds very interesting, but will definitely give me heartburn. Maybe I will try it out on DH first. Hmmm

Hi Cindy I grew up in the "Burg" and you are right about the pies. However, DeLorenzo's Has THE BEST Tomato Pie of all. They are on Hudson Stree. I know the burg is pretty bad now and some of old timers go back just for the food. You can find another DeLorenzo's on Rt 33 Robbinsville. You will love this pie. Please note there will be a line waiting to get in BUT IT IS WORTH IT!!! Let me know if you try it. Sandy Carlini

I grew up in Fairless Hills, PA and had many friends in Levittown. One had a grandma in Chambersburg. So I know where you mean. :)

I love tomato pies and am anxios to try tomato musrard pie. It is unusual but I like vinegar custard pies so I am sure I will like this receipe. Thank you Fern

OK Cyndi - do I add ricotta on top of the pizza sauce for the mustard tomato pie? I love mustard too. And am growing to love it more every day! I had always stayed away from recipes with mustard (duh!) but have been embracing those recipes for about two years now. The first one I tried was Crisp Butterflied Chicken with Garlic/Butter/Mustard/Rosemary under the skin. Then I made a prk chop with garlic mustard sauce. Two nights ago I made a chicken pot roast recipe and added mustard and it was great. Last night I made beef stroganoff with mustard in the sour cream sauce instead of tomato paste. I believe I am a full fledged mustard afficiano now. (Must have it on dogs and brats!)

Was that "Papa's" on Chambers? Great pies! Delorenzo's had the best TOMATO Pies! Castillio's had the best Pizza in town. Casino Italian Dogs? None Better! Now I'm homesick! LOL

What a fun post! Loved the included conversation! I'm always testing unusual foods and this one sounds worth a try... much more than the peanut butter pizza (with cheese) that I tried in California. Good job :)

Very familiar with the burg. When we were kids and visiting my cousin we use to walk to Papa's for a pie. Just us 4 little ones ... they were the days when kids could walk to get a pie and be left alone and safe. Love Papa's and Freddie's in West Trenton has a good pie too. DeLorenzo's has good pies but I don't like the way they treat their customers, no appreciation.

I just want to say I am enjoying everyone's comments regarding my first blog! I just want to clarify that in my instructions on how to assemble this, there isn't any ricotta cheese on the pie, I just used that as an example of how to "dollop" the tomato sauce on the pie. It's not really meant to be spread being it's going on top of the cheese. I would have to say besides the wonderful taste, the difference between pizza and tomato pie is the cheese is placed on the dough first, and then the sauce and toppings. There is more tomato than cheese on these pies, and again, it's more than just a pizza sauce, the tomato flavor is excellent. I also am enjoying hearing from those of you who are familiar with the 'Burg. Definitely brings a smile to my face (: Also thanks to the compliment of my photos...Cyn

Love your cat photos...I'm a cat lover also,I have 2 Kittys and a German Shepard and 3 young kids so no more room for any more cats.....LOL

Cyndi, A first for me too, I never responded to one of these, but had to after reading your post and looking at pics of your adorable cats. I still live in the "Burg",by Roman Hall. I was once known as the cat lady around here,lol.I have 3 cats and 2 German Shepherds myself. The tomato pies, if I remember right, are just seasoned tomatoes with parmesan on top. I haven't had one since I lived next to DeLorenzo's years ago. If you like sicilian, you should try Jeppy's. They make a awesome white 3 cheese and other gourmet varieties. We still have the best around, Go Burg !!!!

cyndi, Thanks for your kind words re: my Fred...I did look at your pics and Buddy looks like he was a great dog just like Fred who was a shepherd,retreiver mix. Maybe they're hangin' out in heaven.

I am a wonderful mother to seven beautiful cats (: and I love to cook and eat! I work full-time in a office, love the outdoors, nature, animals and gardening. Baking is a favorite of mine, I had an amazing Grandmom that made miracles happen with her baking knowledge. I have learned a lot from her at a very young age just watching and helping. I do cook with wine a lot, but none ever makes it into the food (: To me, the most important things in life are good health and spending precious time with loved ones. My favorite things to cook
I really don't know if I have a favorite. I love making all types of different things. I love making pasta dishes & cooking with many vegetables. I also enjoy grilling anything from meats to fish to mushrooms, whatever. I do enjoy baking very much, cakes and cookies the most.
My favorite family cooking traditions
One that seems to stand out the most is the Christmas cookie marathon. I'm pretty much baking the whole entire month of December. I make about 10 different types of cookies and make dozens and dozens of each one. I love it, although it gets exhausting, but I wouldn't have it any other way (: I really get into holiday's, and enjoy cooking big elaborate spreads, whether it be Easter, or a Halloween party. Sometimes there isn't any reason, but just to make a bunch of good food and celebrate!
My cooking triumphs
Triumph to me is when I attempt making something and succeed. It's a great feeling to see and taste the accomplishment of a great meal, and hearing others enjoy it so much. Fortunately, I get to hear that often (:
My cooking tragedies
I'm happy to say I really don't have that many. There is one that I do remember very well. Several years ago I was going to make a basic fish dinner. Shrimp cocktail for an appetizer, some baked potato wedges, and basic breaded baked flounder fillets. I can't even begin tell you how many times I had made shrimp before, but this time they were like hunks of rubber. The flounder breading tasted stale, what cardboard may taste like, and my potatoes were a soggy horrible mess. It still amazes me to this day how everything turned out so terrible. Everything was so not edible, so I literally threw it out the back door. I believe we ordered out that night, and the night time critters had a fish dinner (:
