Baked Apples
Others are right--THE COOKING TIME MUST BE LONGER. The "BC" cookbook, with a similar recipe, suggests 45 minutes at 375 degrees. I followed the instructions of this recipe and the apples were nearly as firm as when the went in the oven. The butter-brown sugar-cinnamon mix was good, though.

Sweet Potatoes 'n' Pears
Very good--nothing fancy, but just the right amount of sweetness. This recipe requires very few ingredients and is quick so it's easy to make on a weeknight. Be aware that it does have that "baby food" texture, which some people like and some don't.

Peppery Beef Stir-Fry
The only flavor in this recipe was the soy sauce, which in my opinion was not tasty. The beef was especially bland. The redeeming factors were the ease of prepartion and the healthfulness of that many vegetables.
