Zucchini Brownies

Made these brownies exactly as written, with the exception of no frosting (they didn't need it!) They were super moist and tasty. I admit I was a bit afraid when I first mixed the oil and sugar and added the dry ingredients, but once the zucchini was added, it was a nice stiff brownie batter. They were wonderful, and knowing they were made with vegetables took away just a LITTLE of the guilt. Wonderful way to use up that surplus zucchini. Thanks for the recipe, Marian.

Cottage Cheese Roast

Okay, I never take the time to review a recipe, but I was looking for some type of a meat dish to fix for Thanksgiving dinner for my vegetarian kids, and the reveiws for this were so good I had to give it a try. And after trying, I had to review it! I am totally impressed, and can't wait for my kids to try it. After reading some of the other reviews, I did alter it slightly. First of all, I used my food processor and creamed fat free cottage cheese, b/c that's what I had. Then I used it to chop up about 3/4 c. of almonds, b/c that's what I had. I also used it to finely chop corn flakes, until I had 2 1/2 c. I only added about 2 T. oil and 1/2 pkg onion soup mix. I put it all in the food processor, added a little steak dust, some Kitchen Bouquet and a little liquid smoke and some bbq sauce and garlic pepper. Mixed it all well, poured into 2 smaller loaf pans, baked at 350 35 min, put a little more bbq sauce on top and broiled 5 min. Took it out, cooled it, and was WOWED with how much it tasted like meat loaf. I was a little concerned about the almonds, but like another reviewer said, I think it gives it more that beefy texture. Don't be afraid to try this recipe. It can be altered a lot of ways, but it surprisingly delicious! Next time, I may add some veggies just for more nutrition. Thank you, Kittyann!

Southwestern Pasta Salad

Was looking for a different pasta salad for a Father's Day family dinner. This one was PERFECT!!! EVERYONE loved it and wanted the recipe. I didn't have the red and green peppers, but added some green onion and some diced pimento for color. The chili powder and cumin added a wonderful flavor, and we loved the extra kick from the lime juice. It did seem a bit dry after it marinated overnight, so I added a little more olive oil and lime juice the next day. Even my men, who don't like my "girly salads" devoured this. Thank you, Lisa!

Maple Baked Pork Loin Roast

FABULOUS RECIPE!! I used 1/2 bbq sauce and 1/2 ketchup, cooked it ahead and froze it. I took it out the day before we were going to eat it, defrosted it, reheated it for 30 min. at 350 degrees, then basted it with the sauce and placed it under the broiler for about 5 min. Served it with the extra sauce for Sunday dinner, and everyone raved about what a moist, delicious pork loin it was. Thanks for sharing this delicious recipe!!

Perfect Turkey

This was, without a doubt, the best turkey we have ever eaten! I was going to make it ahead and freeze it, but my family wouldn't let me. They ate it as fast as I cut it off! I would definitely use more carrots. Also, I bought fresh sage, rosemary and thyme and cut the skin loose from the meat and placed the herbs under the skin as well as in the cavity of the bird. The flavor was incredible!
