Lemon Sponge Pie I

This didn't really turn out for me, but I think I know how I can fix it so it does. The sponge part was mostly good, but the bottom part was runny like other users had mentioned. I don't know that more time in the oven would have helped, because I had it in for another 10 minutes and I was about to burn the top part. The crust, since it was not previously baked, never cooked on the bottom. I am thinking if I would have baked the pie crust for about ten minutes and then poured the lemon mixture in, it would have helped the crust as well as finish baking the rest of the lemon stuff as well. Something that I will try next time.

Cappuccino on Ice

I doubled the recipe, because I made it for more than just myself. By doubling it, I was able to get about three glasses of the drink. I did not change anything else and we all loved it. If anything, you will just want to make a bigger batch in case anyone wants more! I brewed the coffee strong, just like suggested by another review, and I really think that is what made it so good. But like I mentioned, the only thing I would change is to make more of it...

BBQ Pork for Sandwiches

I followed the advice of another review and cooked the pork for 10 hours, pulled it and drained the broth, and then let the pork marinate in the BBQ sauce over night and reheated it the next day. I would suggest the beginning part (cook the pork in the broth for about 10 hours and then pull the pork/drain the broth) but then I would mix the BBQ sauce right in and just warm it up....then eat it. By marinating it over night and reheating it the pork became mush and there was hardly any texture. I am a big texture person, so it was hard to eat that way. I would rather have bigger chunks of pork than mush. Otherwise, this was amazing, especially with the original Jack Daniel's BBQ sauce. I would highly suggest making this and we will be making it again!

Pineapple Iced Tea

This had a very strange flavor at first. After adding a little more sugar, it seemed ok, but still had a strange after-taste. I am still trying to decide if I would go through making this again. I did double the recipe because with so many people in the house, one quart would not have lasted with one drink per person.

Lemon Meringue Pie III

This pie was amazing! I actually have a ponderosa lemon tree (it gets lemons the size of grapefruits) and my first lemon was ripe. I wanted to make something using it and found this recipe. Everything turned out perfectly, I did add a small bit more of the cornstarch as suggested in other reviews, and if I would change anything, I would put a cup of sugar, instead of a cup and a half, in the filling mixture. It came out a bit sweet. But I would definitely recommend this recipe otherwise as it is....it turned out great, and I WILL be making this again!

Mexican Layered Dip

This recipe was the hit of my party. I listened to some other reviewers and I sprinkled taco seasoning on top of the beans, but I also mixed it in with the sour cream which just tasted amazing! I also used salsa instead of tomatoes, and I added black olives, and jalapenos on top. I heated the layers, up to the cheese and toppings, except for the sour cream. After the cheese was melted, I removed the dip from the oven, let it cool for a minute or two, and then I added the sour cream on top. It was the favorite dish of the evening, and it made it to my "make again and again" list.

Apple Crisp II

This recipe turned out to be quite easy to make. I did omit the water, and it was a good idea because the juice from the apples and sugary syrup created a lot of liquid anyway. I would probably add more flour to the crumby topping, being as it was not as crumby/crispy on the top as I would have liked. It also turned out to be really rich and very sweet, so make sure you have a sweet tooth for this apple crisp. Over all, very good and it has made it into the "make again" pile for me!

Cuban Midnight Sandwich

This was a wonderful sandwich...I made it for my boyfriend and another couple. I added bacon like suggested by some other reviewers, and had provolone cheese instead of swiss (I don't like swiss cheese) and went from there by the recipe...It was a wonderful, quick dinner and was great with the black bean soup. The only other bad reviews I saw was towards the name of it, which I don't care what it is called as long as it is good...and by how much mayo there was. Well, you get to pick how much mayo goes onto the sandwich and the rest of it can be used with any other sandwich you need to make (I make a bunch since I pack my own lunch for work, so for me it worked out great).

Red Pepper-Salmon Pasta

This recipe was awesome! I added 1/3 cup of cream as suggested by another review to the sauce, along with some cayenne, and it turned out very flavorful. I also served it with seasoned rice instead of the pasta, to me fish goes better with rice, and with the sauce as spicy as it sounded, I just figured the flavors would go better with rice. I made it for my boyfriend and another couple and they said it was definitely on the "Make again!" list.
