Italian-Style Quinoa-Stuffed Sole
This is a good basic recipe. My only difficulty was that it was a little bland. I'm on a lot of food restrictions, though, so I wanted to make this recipe work! Solution: GARLIC! I added 2 cloves of garlic to the quinoa as it cooked, and then sliced a 3rd clove and laid that over the sole before popping it in the oven. I also sprinkled a little sesame oil over all before tossing it in. I can't have spicy food right now... but should my stomach again be able to handle it, I would love to try this recipe with a little hot red pepper chopped fine and added into the mix. Someone try it and let me know how it turns out!

Baked Potato Soup
I love this soup - and over a year later, some guests I made it for still talk about it every time I see them (guess I'd better invite them over for dinner again!). The recipe is great as is - but is also a great way to use up mashed potatoes, or even scalloped potatoes (especially if you make a spiced scalloped potato dish - yum!). I would recommend not garnishing yourself - but putting small dishes of "baked potato garnishes" (sour cream, bacon bits, cheese, green onion, chives... anything else you might think of) on the table and letting guests dress their own. Great fun!

Chorizo and Lentil Stew
This is now one of my favourite stew recipes - I always add in some frozen chopped spinach, and often chop up and toss in whatever veg I have on hand that I need to use up - bet you could use kale as well, will try that next time. Works great in the slow cooker!
