Santa Fe Rice Salad
This was very very tasty! The ingredients all went very well together. My only complaint is that it was not very good the second day. All of the ingredients tasted too much like vinegar. Next time I will probably only make half as much as not to have leftovers.

Green Turkey and Cheese
This was really tasty. My only complaint is that the cheese was overcooked. I think when I make it again I won't add the cheese until the last minute. In that case, I will cover the dish with foil before baking otherwise the turkey will dry out. I will try this one again perhaps with chicken.

Skillet Zucchini
This was very yummy!! I didn't have any tomatoes, but it was great anyway. Not one the kids will enjoy, but I will make it again for me!
