Molasses Bran Muffins

Reviewed: Dec. 6, 2009
These were tasty and were not dry, but did not have a nice "muffin" texture either. They tasted like your typical lowfat muffin/cake made with little or no oil, a little gummy. If you don't mind that, this is a great recipe. Just don't expect to fool anyone who doesn't like the lowfat stuff. I had to eat the entire batch myself, but I would probably still make again for a healthy breakfast/snack.

Very good and simple to make. I added cubed and browned ham and it made it a meal. Will definitely make it again.

Key West Chicken

Delicious and so easy! I used boneless chicken thighs and grilled on a gas grill. I made extra marinade for a dipping sauce. I will be making this over and over. So tasty!

Baked Teriyaki Chicken

We ate the chicken, but I would not make it again. There was too much vinegar, and the sauce was not very flavorful at all. Very boring.

Baked Mac and Cheese for One

Reviewed: Apr. 19, 2009
I'm not a mac and cheese fan, but my husband and daughter love it. This recipe was super simple and made a very creamy sauce. I quadrupled the recipe, omitted the mustard and worchestshire, added seasoned ground turkey, crispy bacon bits and ritz crumbs before baking. I also used 3 types of cheese: asiago, cottage cheese, and a mexican blend. My husband said it was "so good". Thanks!

I thought this tasted very eggy and not very good.

Mouth-Watering Stuffed Mushrooms

My husband really liked these. I thought they were pretty bland even though I added a can of minced drained clams. I would make again for a dinner party but it is not worth the effort for a regular dinner.

Tres Leches (Milk Cake)

Reviewed: Mar. 17, 2009
I was really disappointed after all the effort, wasted ingredients, and waiting. After I mixed up all the liquid and saw how much it was, I was hesitant to pour it all over the cake, but I did anyway. WHAT A MISTAKE. The next day it tasted like a big wet cake. Forget about it looking presentable or even frosting it. It was way too sweet too. The best part was the fresh whipped cream and the toasted coconut I put on top. I've only had tres leche cake from an american bakery, so don't know if it is the authentic version that I'm used to. That cake was not soaked through and was wonderfully light and moist. I was not prepared for such a wet cake.

Applesauce Cake I

This cake was quite tasty and very easy to make. But it did not look pretty at all. The kind of cake to make for snacking, not to bring to an event or have for guests.

Roasted Rack of Lamb

Reviewed: Jan. 12, 2009
I thought the flavors were good but there were a few problems I see most people having: 1) Searing for even that short amount of time left my pan (a beautiful all-clad) blackened and my home filled with smoke. I was THIS close to setting off the smoke detector! And it didn't seem to get charred enough to help the final product. 2) I don't see how the crumbs could get crispy. Mine were just soggy. Though still tasty. Maybe dried bread crumbs would be better? My husband wants me to make it again but next time I will not sear it and I will omit the bread crumbs.

Quick Quiche

Fantastic base batter to use with any filling I have handy. I save a lot of calories over using a pie crust. I like putting my shredded cheese on top in the last ten minutes of baking to give it a good crusty texture.

Easy Devonshire Cream

Reviewed: Dec. 31, 2008
Just okay. The cream I've had at tea houses is much thicker, almost butter like, and had no tang like this did. I whipped the stuff forever and it never seemed to get thick enough. Tasted good with scones but I didn't like it alone.

Fried Cabbage II

Reviewed: Dec. 13, 2008
This was delicious, especially if you cook the cabbage until it is very soft. I only had bacon bits (probably used too much) and added a couple tbsp of oil since there was no fat coming out when I fried it up. I was hesitant about the vinegar, but it was a great, subtle tang. I have a hard time believing that a serving was only 48 calories, especially with all the bacon grease! But if it is true, I will be serving this all the time for sure.

Holiday Peppermint Bark

Reviewed: Dec. 13, 2008
Very good and easy with the microwaving instructions. I gave it 4 stars because there is no real peppermint flavor unless you add peppermint extract. I used 2 tsp. I also tried the dark chocolate layer on the bottom, but the white separated from the dark when I broke it apart. Any tips to keep it together?

Caramel Frosting I

Reviewed: Dec. 5, 2008
This is a nice glaze and looks very smooth if used when warm. I thought it was grainy tasting, the same texture from the brown sugar. not sure how to help that? I put on chocolate cupcakes. Good flavor too. Not outstanding but will definitely make again. My husband didn't like it.

Oatmeal Cake II

Reviewed: Dec. 5, 2008
My husband raved and said he could eat it every day. I thought they were just okay. They tasted a bit "wet". Like oatmeal mashed into a cake. I would prefer something closer to an oatmeal cookie or oatmeal biscuit. Good flavor though.

Sour Cream Chocolate Cake

Reviewed: Nov. 25, 2008
Maybe it's just me, but I did not like the texture of this cake at all. It was not that chocolately and I did not like the sour cream frosting. I was afraid of a tangy frosting and I was right - I didn't like the tang!

To Die For Blueberry Muffins

Reviewed: Nov. 25, 2008
These were very good, but nothing to scream about. The ones they sell at Costco are better. The crumb topping is tasty and takes it to another level - a sweeter, more dessert like muffin. I didn't think it was worth the trouble of sticky hands. I will make again, but without the crumb topping.

Honey Bran Muffins

Reviewed: Nov. 24, 2008
This is a good basic muffin but nothing to really scream over. The texture was rather chewy right out of the oven, but tasted much better after toasting in the toaster oven. I followed the recipe exactly except used cranberries instead of raisins. I couldn't taste the pineapple juice at all, which was disappointing. I also thought the batter was too sweet before baking, but it came out just right after it was cooked. I would make again, but I will continue to search for a recipe closer to Mimi's Cafe bran muffins. These were a bit bland.

Asian Barbequed Steak

Flavor was good but WAY too salty! Definitely water it down. I would try again if I could water the sauce down and get it right without ruining perfectly good meat. It was barely edible.
